Steps:

  • Preheat oven to 400 degrees, with racks in middle and lower thirds. On two rimmed baking sheets, arrange bread in a single layer. Toast until dry and pale golden brown, 10 to 12 minutes. Let cool.

1 (1/2-pound) loaf whole grain bread, cut into 1/2" cubes (about 4 cups)
6 cups apple cider
3/4 cup golden raisins (about 4 ounces)
1/2 cup apple cider vinegar
1 pound thick-cut smoked bacon, cut crosswise into 1/2" pieces
1 large head of celery, stalks chopped (about 3 cups), whole leaves reserved
2 Gala or Honeycrisp apples, cored, coarsely chopped
4 large shallots, coarsely chopped (about 2 cups)
2 garlic cloves, finely chopped

1 large onion, chopped
3 stalk s celery, chopped
1 cup SunMaid brand raisins
1-1/2 cups chopped walnuts, but not too fine you want to see the walnuts in the stuffing
1 teaspoon sage
1/2 teaspoon poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups water

Steps:

  • Put dry bread crumbs in a large bowl - set aside.
  • Melt butter in frying pan and add all ingredients, except the water and bread crumbs. Cook on medium heat until the onions and celery are transparent, but not burned. Turn off burner.

  • Preheat oven to 400°F. Spray 2 large rimmed baking sheets with nonstick spray. Place half of bread pieces in large bowl. 2 ribs celery, cut into 1/4-inch pieces

2/3 cup whole macadamia nuts, unsalted

4 slices (1-inch) day-old brioche, cut into 1-inch cubes
1 cup low-sodium canned chicken broth
2 cups fresh cranberries
