1 cup lump crabmeat, drained
1/3 cup dry bread crumbs

1 large egg, beaten
2 tablespoons diced pimientos, drained
1/4 teaspoon seafood seasoning
4 tilapia fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon paprika

Steps:

  • In a large skillet, saute onion and celery in 1/4 cup butter until tender. Remove from the heat; stir in the crab, bread crumbs, mayonnaise, egg, pimientos and seafood seasoning. Spread 1/3 cup crab mixture over fillets. Roll up each from the pointed end; secure with toothpicks., Place seam side down in a greased 9-in. square baking pan. This recipe came from www.tilapia.ws that turned out wonderfully. It is a rich and spicy recipe that can be used on other similar fish as well. It was difficult to roll the fillets easily, so I placed one fillet on the bottom of the casserole dish, layered the crabmeat on it and topped with another fillet of Tilapia. Larger fillets would work out better for rolling. Also one can adjust the amount of cayenne as desired. Worked out great.

4 ounces fat free cream cheese
0.5 (8 ounce) can spinach
1 teaspoon nutmeg
1 pinch salt
1/2 crushed garlic clove
4 Ritz crackers

Steps:

  • Preheat the oven to 350°F
  • Blend the cream cheese and spinach in a large bowl.
  • Add the garlic, nutmeg, and salt
  • Spray a baking dish with non-stick spray
  • Arrange the fillets on the pan and slice a slit down the fish.
  • Spoon the cream cheese mixture onto the fish, flattening it so that it seeps in the slit (this isnt' TRUE stuffed fish -- a lot will just be spooned over the top)
  • Sprinkle Ritz or bread crumbs over fish

  • *I didn't use all of the cream cheese mixture, so I recommend saving the left over and using it as a spinach dip! My husband loves it on wheat thins or chips! The recipe will actually be closer to 135 calories since you won't use all the mixture most likely.

4 tilapia fillets
4 slices bacon
1 tablespoon olive oil
1/4 cup chopped red onion
1/4 cup chopped red pepper
3 tablespoons plain crushed breadcrumbs
1 tablespoon lemon juice
1 tablespoon light brown sugar
1 tablespoon minced garlic
1 teaspoon dried parsley flakes
1/4 teaspoon black pepper

1 lb fresh green beans

Steps:

  • Preheat oven to 350 degrees.
  • 1. In a small sauce pan heat the oil. When heated add the onions and fry for 2-3 minutes or until translucent.
  • 2. Add the red peppers, lemon juice, brown sugar, garlic, parsley, black pepper and salt. bring the mixture to a boil, then reduce to a simmer and cook 5 minutes, or until the peppers are tender.
  • 3. While the mixture cooks prepare your baking dish. (I use a disposable aluminum 8x8 in square cake pan because i dont like bacon grease on my good pans) Cut srips of reynolds wrap the size or your baking dish about 6 will be fine. Crinkle the strips of foil and securely place them in the bottom of your dish to make racks.
  • 4. Remove the pepper mixture and process in a food processor (or blender) until smooth.
  • 5. Return the mixture to the pan and stir in the bread crumbs until combined.
  • 6. Spread the mixture evenly among the 4 Tilapia filets and roll them up. Wrap them in bacon using one strip of bacon per filet. If needed secure them in place with toothpicks.
  • 7. Place the filet rolls over the racks to let the grease drain. Cover with reynolds wrap foil and bake in the preheated oven for 20 minutes.
  • 8. In another baking dish spread the green beans evenly apart and sprinkle the top with pamesan cheese.
  • 9. After the 20 minutes remove the filets and turn on the broiler. Remove the foil cover from the filets. Put the green beand and filets under the broiler and broil until the top of the bacon is crispy. Turn the filets to crisp the bottom side. If the cheese is burning too badly, take out the beans. when both sides f the bacon are crispy, take them out.
  • Serve the tilapia with a big side of green beans and enjoy.

1 egg white
2 tablespoons flour
1/2 lemon
2/3 cup finely chopped cashews (I used the food processor)

1/2 teaspoon garlic salt
1 cup cooked orzo pasta
1 cup chopped fresh spinach

Steps:

  • Combine all Cashew Crust ingredients in a small bowl and mix well.
  • Rinse tilapia and pat dry.

1 lb tilapia fillet (4 6 oz filets)
12 ounces coconut juice (I used juice) or 12 ounces milk (I used juice)
1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
1/2 cup celery, diced
1/2 cup onion, diced
1/4 cup carrot, diced
1 teaspoon garlic, chopped
1 (10 ounce) carton frozen chopped spinach, thawed and drained
2 tablespoons white wine (I used Chardonnay)
1 tablespoon fresh lemon juice
1 cup chopped shrimp (can be fresh, frozen, cooked)
1 teaspoon powdered coriander
1 teaspoon basil
2 teaspoons lemon pepper
salt and pepper
1 egg (lightly beaten)
1/2 cup plain breadcrumbs
4 cups mashed red potatoes
6 tablespoons milk
2 tablespoons butter
salt and pepper
paprika

Steps:

  • Wash tilapia in cold water and pat dry.
  • Place in a bowl.
  • Pour coconut juice to cover.
  • Cover bowl and refrigerate 2 - 4 hours.
  • STUFFING.
  • Heat Saute pan.
  • Add butter and EVOO.
  • Saute celery, onion, carrot until tender.
  • Add garlic and saute 1 minute.
  • Add wine and reduce for 1 minute.
  • Add lemon juice.
  • Add shrimp and spinach.
  • Continue cooking until shrimp is pink and spinach is hot.
  • Stir in basil, corriander, lemon pepper, salt, pepper.
  • Remove from heat, put in bowl and allow to cool.
  • When cool, blend in egg and breadcrumbs.
  • POTATOES.
  • Wash, peel, cut in half, boil till fork tender.
  • Mash thoroughly.
  • Add milk, butter, salt and pepper to potatoes and whip until smooth.
  • Add more milk if required to be able to spread potato.
  • COMBINING.
  • Spread 1/2 of the stuffing on one filet and cover with another filet.
  • Place on well oiled baking sheet.
  • Spread the top with some of the potato mixture.
  • Turn over and cover the sides and top (like frosting a cake).
  • Do the same with the other filets.
  • Sprinkle with paprika.
  • Bake for 20 - 25 minutes until potato is slightly brown.

1 small white onion, finely chopped
4 medium tomatoes, seeded and finely chopped (roma or plum works best)
2 small jalapeno peppers, seeded and finely chopped
1/2 cup fresh cilantro leaves, chopped
1 medium lime, juice of
1/2 teaspoon salt (or to taste)
1/2 lb shrimp (51-60 size)
3 teaspoons garlic, minced
1/4 cup red bell pepper, diced
1/2 cup shredded monterey jack cheese
2/3 cup butter, melted
1/2 medium fresh lemon, juice of
1 tablespoon chopped fresh parsley
2 cups Italian seasoned breadcrumbs, divided
1/2 teaspoon garlic powder
1 1/2-2 lbs fresh tilapia fillets (8 filets)
1/4 cup butter, cut into 12 pats

Steps:

  • Tear 4 sheet of Reynolds Wrap Heavy Duty Aluminum Foil (12x18-inches each) set aside.
  • Combine in a medium bowl the chopped onion, tomato, jalapeno peppers, cilantro, lime, and salt. Refrigerate for one hour or until ready to serve.
  • Combine in another medium bowl the chopped shrimp, garlic, red bell pepper, shredded cheese, melted butter, lemon juice, parsley, and 1 1/4 cups bread crumbs. Toss to moisten evenly.
  • Toss together in a shallow dish the remaining bread crumbs and garlic powder. Set aside.
  • Rinse and pat dry each filet. Scoop scampi filling (about 1/3 cup heaping) and fill the center of four filets pressing to set the filling. Leave about 1/2 inch border around filet free from stuffing. Cover each with the remaining tilapia filets, pressing to seal edges together. Coat both sides of tilapia with bread crumb mixture.
  • Place one pat of butter then stuffed filet in the center each sheet of Reynolds Wrap Heavy Duty Aluminum Foil®. Place two pats of butter on top of breaded filets then bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets and place on baking sheet.
  • Bake in preheated oven at 375 degrees for 20 - 25 minutes until thoroughly cooked.
  • Transfer to serving plate. Tear open each packet and serve each scampi stuffed tilapia packets with a heaping serving spoon of Pico over top of each portion.

1 cup monterey jack pepper cheese
1 -10 1/2 ounce cream of chicken soup
1/4 cup chicken broth or 1/4 cup water
2 (4 1/2 ounce) cans green chilies (hot or mild)
1/4 teaspoon cajun seasoning (or seasoned salt)

Steps:

  • Pre-heat oven to 350F degrees.
  • Stuffing:.
  • Combine stuffing ingredients and hand mix well.
  • On a oiled baking sheet or 2 lay out half of the fillets.
  • Place the stuffing on each fillet.
  • Top with remaining fillets and lightly press together.
  • Sprinkle with Cajun seasoning or seasoned salt.

8 small pieces of fish, cleaned and blood line removed.
6 oz softened cream cheese
2 Tbsp tarragon
2 oz pimiento
A pinch of cayenne pepper
2 oz sliced mushrooms
A bowl of seasoned flour
A bowl special egg wash 2 eggs, 3 tbsp mayo and 3 tbsp honey mixed well
A bowl panko bread crumbs
A can(s) spray pam.

Steps:

  • 1. By cleaning the blood line, is to cut on a buyass the dark red line in the center of the fish. Mix the stuffing by adding the cream Cheese ,Pimiento, Mushrooms, tarragon, Cayenne pepper, together. Place 4 pieces of fish on a sheet pan, top each fish with some stuffing and place a second piece of fish on toppress firmly to allow the stuffing to settle on the fish. Place the fish in the freezer uptil it becomes firm not frozen. Goll the fish in the seasoned flour, then in the Chefs special egg wash, making sure the flour has all the wash covering it.Then place the wet fish in to the Panko pressing firmly si the Panko sticks. Place them on a sheet pan, and spray the pam well on both sides. Place the sheet pan in a pre set ovenat 350 degrease until the fish turns a light golden brown. Enjoy.

  • To prepare the stuffing, heat the oil in a medium-size sauté pan over medium heat. Add the red and yellow peppers, shallot, and the garlic. Sauté until the peppers begin to soften, about 5-8 minutes. Add the asparagus and cook for an additional 2-3 minutes. Remove the vegetables from the heat and let cool. Place the mixture into a bowl and add the cracker crumbs, chives, basil, parsley, Old Bay, salt, black pepper, and mayonnaise, mixing well. Gently fold in the crab meat, being careful not to break it up too much. Set the stuffing aside. Preheat oven to 350°F. Place the tilapia filets flesh-side down on a work surface.
