Categories     Dessert     Roast     Strawberry

Yield 4 servings

Number Of Ingredients 5

12 extra-large strawberries (the bigger the better!)
1 to 2 ounces bittersweet chocolate, chopped
1 teaspoon sugar (optional)
Spray whipping cream (the real kind in the can in the dairy section)
Cocoa powder, for garnish

Steps:

  • Preheat the oven to 400°F.
  • Slice the tops of the berries off just below the stem. Cut the tips off (about 1/4 inch), so that the berries will sit upright. Next, use a small spoon or a melon-ball scoop to hollow out the strawberries, working from their tops, to create a cavity in each one. Stuff some chocolate into the cavity of each strawberry and place them upright in a baking dish. Lightly sprinkle the berries with sugar, if using. Roast the berries until soft and the chocolate is melted, 10 to 12 minutes.
  • To serve, place 3 strawberries on a dessert plate in a triangle. If the berries have given off liquid in the baking dish, spoon it over them. Spray a small mound of cream in the center of the berries, and top each berry with a rosette of cream. Sift a little cocoa powder over the plate, and serve!

Number Of Ingredients 8

4 tablespoons unsalted butter, melted
1 vanilla bean, split lengthwise
24 strawberries, tops cut off

2 tablespoons cherry or plain balsamic vinegar
3 tablespoons red wine
1 tablespoon cold unsalted butter, cut into small pieces
A baking dish, about 9-inches square

Let cool 20 minutes, then remove the berries from the pan and pour the pan juices into a small skillet.

STUFFED STRAWBERRIES

Yum, yum! Sometimes I add some finely chopped semi-sweet chocolate. These are perfect for baby showers or wedding showers. A plastic sandwich bag can be used instead of a pastry bag by filling with the cream cheese mix and making a tiny cut in the corner.

1 (8 ounce) package cream cheese, softened
½ cup confectioners' sugar, or to taste

Steps:

  • Cut the tops off of the strawberries and stand upright on the cut side. Make a cut 3/4 of the way down from the tip of the strawberry towards the bottom.

Tips:

  • Choose ripe and firm strawberries for stuffing. Overripe berries will be too soft and may fall apart during roasting.
  • Use a small, sharp knife to make a deep slit in each strawberry. Be careful not to cut all the way through.
  • Fill the strawberries with your favorite fillings. Some popular options include goat cheese, cream cheese, nuts, and chocolate.
  • Drizzle the strawberries with olive oil or melted butter before roasting. This will help them to stay moist and prevent them from drying out.
  • Roast the strawberries in a preheated oven at 400 degrees Fahrenheit for 15-20 minutes, or until they are tender and slightly caramelized.
  • Serve the strawberries warm or at room temperature. They can be enjoyed as a snack, dessert, or side dish.

Conclusion:

Stuffed roasted strawberries are a delicious and easy-to-make appetizer or dessert. They are perfect for any occasion, from casual gatherings to special events. With so many different filling options to choose from, you can customize them to suit your own taste.
