1 pork tenderloin
½ bunch flat-leaf parsley, chopped
⅓ cup bread crumbs
¼ cup dried currants
3 cloves garlic, minced
2 sprigs fresh rosemary, chopped

2 tablespoons olive oil
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 pinch cayenne pepper
salt and ground black pepper to taste

Steps:

Cut a few shallow slashes in the meat. Cover the meat with plastic wrap and pound to about 1/2-inch thick. Roll up pounded tenderloin, cover with plastic wrap, and refrigerate to keep cold.

MUSHROOM-STUFFED PORK TENDERLOIN

Mushroom-Stuffed Pork Tenderloin image

Provided by Food Network Kitchen

Time 1h10m

Yield 6 servings

Number Of Ingredients 9

5 tablespoons extra-virgin olive oil, plus more for brushing
4 slices bacon, chopped
8 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground pepper
1 clove garlic, finely chopped
1 tablespoon breadcrumbs
1/2 cup chopped fresh parsley
2 pork tenderloins (2 to 2 1/2 pounds total), trimmed
1/2 teaspoon grated lemon zest

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the bacon and cook until crisp, about 8 minutes. Add the mushrooms, 1/2 teaspoon salt, and pepper to taste; cook until the mushrooms are soft, about 4 minutes. Add the garlic and cook 1 minute. Remove from the heat and stir in the breadcrumbs and all but 2 tablespoons parsley. Let cool.
  • Soak 10 to 12 toothpicks in water to prevent them from burning. Rinse the pork and pat dry. Butterfly the pork: Make a 1-inch-deep incision down the length of each tenderloin; do not cut all the way through. Open the meat like a book so the tenderloins lie flat.
  • Cover the pork with plastic wrap; pound with the flat side of a meat mallet until about 1/2 inch thick, starting from the middle and working outward. Spread the mushroom mixture over the 2 tenderloins. Starting with a long side, tightly roll up each tenderloin. Secure the seams with the toothpicks.
  • Preheat a grill to medium high; brush the grates with olive oil. Brush the pork rolls with olive oil and season with salt and pepper. Grill, turning, until a thermometer inserted into the center of the pork registers 140 degrees F, 25 to 30 minutes. Transfer to a cutting board to rest, about 10 minutes.
  • Mix the remaining 3 tablespoons olive oil and 2 tablespoons parsley, the lemon zest, and salt and pepper to taste in a bowl. Remove the toothpicks and slice the pork rolls. Top with parsley oil.

Tips:

  • Choose the right pork tenderloin: Look for a tenderloin that is firm to the touch and has a consistent color. Avoid any tenderloins that have a slimy texture or discoloration.
  • Flatten the pork tenderloin: This will help the tenderloin cook evenly and prevent it from drying out. To flatten the tenderloin, place it between two pieces of plastic wrap and use a meat mallet or rolling pin to pound it until it is about 1/4-inch thick.
  • Season the pork tenderloin generously: This will help to enhance the flavor of the tenderloin. You can use a variety of seasonings, such as salt, pepper, garlic powder, onion powder, and paprika.
  • Use a flavorful stuffing: The stuffing is what will really make your stuffed pork tenderloin shine. There are many different stuffing options to choose from, so feel free to get creative. Some popular options include bread crumbs, sausage, vegetables, cheese, and nuts.
  • Roll the pork tenderloin tightly: Once you have added the stuffing, roll the pork tenderloin up tightly and secure it with toothpicks or kitchen twine. This will help to keep the stuffing inside the tenderloin while it cooks.
  • Cook the pork tenderloin properly: The best way to cook a stuffed pork tenderloin is to sear it in a skillet and then finish it in the oven. This will help to create a crispy crust on the outside while keeping the inside moist and juicy.

Conclusion:

Stuffed pork tenderloin is a delicious and impressive dish that is perfect for any occasion. By following these tips, you can make sure that your stuffed pork tenderloin turns out perfectly every time.
