3 lbs moose round steak
1/2 cup butter
1 lb ground venison
salt and pepper
1 large onion, chopped
1 cup water
2 tablespoons pine nuts
1/2 cup Burgundy wine

Steps:

  • Melt 1/2 stick butter in large heavy skillet at low heat.
  • Brown onion, adding ground venison and pin nuts.
  • Tenderize steak with meat tenderizer using directions on bottle.
  • Lay steak on floured board.
  • Spread ground meat mixture on round steak and roll up as a jelly roll.
  • Tie with butcher string.
  • Melt remaining butter and brown steak on all sides.
  • Add water and burgundy.
  • Cover and steam for two hours or until tender.

1/4 cup honey
2 tablespoons soy sauce
2 tablespoons butter, cut in chunks
2 cups stove top flexible serving seasoned stuffing mix
1 red peppers or 1 green pepper, chopped
4 cube steaks or 4 round steaks, pounded for rolling
1 cup hot water

Steps:

  • Mix honey and soy sauce, set aside.
  • Combine stuffing, hot water, butter and red or green pepper.
  • Spoon 1/2 cup stuffing on each steak.
  • Roll steaks, secure with toothpicks.
  • Place steaks in baking pan.
  • Spoon honey mixture over steaks.

2 -3 lbs round steaks (cut up into bite size pieces)
2 tablespoons margarine or 2 tablespoons butter
1 whole bunch celery, chopped
2 medium onions (Diced)
2 green peppers (Diced)
2 (4 1/2 ounce) cans mushroom pieces, drained (Save liquid)
4 (10 3/4 ounce) cans tomato soup
1 (6 ounce) can pitted black olives (sliced)
1 cup water
pepper

Steps:

  • Cut up Round steak and brown with Margarine in large pan.
  • Add celery, onion, green pepper and mushrooms (drained), cover and cook on medium until tender,about 45 minutes, stirring every 15 minutes.
  • Add tomato soup,water,sliced black olives,juice from mushrooms,pepper. stir well.

2 pounds beef top sirloin steaks, (about 1 pound each)
4 bacon strips, diced
1 medium onion, chopped
1-1/2 cups unseasoned stuffing cubes
2 tablespoons minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon celery salt
1/4 teaspoon rubbed sage
1/4 teaspoon pepper
1 cup beef broth
1 can (8 ounces) tomato sauce
4-1/2 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • Flatten steaks to 1/4-in. thickness; set aside. In a large skillet, cook bacon over medium heat until crisp; using a slotted spoon, remove to paper towels. Drain, reserving 3 tablespoons drippings. , Saute onion in the drippings. Add the croutons, parsley, salt, celery salt, sage, pepper and bacon. Spread over each steak to within 1 in. of edges.
