Time 4h10m

Yield 6 serving(s)

Number Of Ingredients 13

1 lb ground beef
1/3 cup chopped onion
4 cups coleslaw mix
1 medium green pepper, chopped
1 cup uncooked instant rice
1 1/2 cups water
2 beef bouillon cubes
1 (6 ounce) can tomato paste
1 (14 1/2 ounce) can diced tomatoes, undrained
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • In a skillet, cook beef and onion over medium heat and drain.
  • Transfer to crock pot and add slaw mix, green pepper and rice.
  • In the microwave, dissolve bouillon cubes in water.
  • In a bowl, combine the water and tomato paste and stir in the remaining ingredients.
  • Pour over beef mixture and mix.
  • Cover and cook on low for 4-5 hours or until rice and vegetables are tender.

Tips:

  • Choose the right cabbage: Select a large, firm cabbage with tightly packed leaves. Savoy cabbage or green cabbage works well.
  • Prepare the cabbage leaves: Remove the outer leaves of the cabbage and blanch the remaining leaves in boiling water for a few minutes. This will make them pliable and easy to roll.
  • Use a variety of fillings: Get creative with the fillings for your stuffed cabbage casserole. Ground beef, pork, turkey, or a combination of meats can be used. You can also add vegetables like rice, onions, carrots, and celery.
  • Season the filling generously: Don't be afraid to season the filling with your favorite herbs and spices. Salt, pepper, garlic powder, onion powder, and paprika are all good choices.
  • Roll the cabbage leaves tightly: When rolling the cabbage leaves, make sure to tuck in the sides to prevent the filling from spilling out. You can secure the rolls with toothpicks or kitchen twine.
  • Layer the cabbage rolls in the crock pot: Place the cabbage rolls in a single layer in the bottom of the crock pot. Add a layer of tomato sauce or broth, then repeat the layers until all the cabbage rolls are covered.
  • Cook on low and slow: Cook the stuffed cabbage casserole on low for 8-10 hours or on high for 4-6 hours. This will allow the cabbage rolls to cook through and the flavors to meld.

Conclusion:

Stuffed cabbage casserole is a hearty and delicious meal that is perfect for a cold winter day. It is also a great way to use up leftover cabbage and ground beef. With a few simple tips, you can make a delicious stuffed cabbage casserole that your family will love.
