Categories     side-dish

Time 1h20m

Yield 12 servings

Number Of Ingredients 8

12 large sweet potatoes
3/4 cup (11/2 sticks) unsalted butter, at room temperature
3/4 cup light brown sugar
3/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup toasted pecan pieces
1 cup miniature marshmallows

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash the sweet potatoes, scrubbing them well to remove any dirt. With a fork, prick the sweet potatoes in a couple of spots and place them on a sheet pan. Bake for about 45 minutes, or until a knife inserted in the center goes in easily.
  • In a large bowl, mix the butter, brown sugar, and flour together until it's crumbly-looking. Add the cinnamon, salt, pecans, and marshmallows; fold the streusel topping together to combine.
  • Slice the sweet potatoes lengthwise down the center and push the ends towards the middle so it opens up. Stuff the sweet potatoes generously with the streusel topping and return to the oven. Bake for another 20 minutes, or until the topping is bubbly and brown.

Tips:

  • Choosing the right sweet potatoes is key. Look for firm, unblemished sweet potatoes that are about the same size so they cook evenly.
  • Use a sharp knife to score the sweet potatoes. This will help the butter and brown sugar mixture penetrate the potatoes and create a crispy crust.
  • Don't overcrowd the baking dish. Leave some space between the sweet potatoes so they can cook evenly.
  • Bake the sweet potatoes until they are tender when pierced with a fork. The cooking time will vary depending on the size of the potatoes, so check them often.
  • While the sweet potatoes are baking, make the streusel topping. Combine all of the ingredients in a bowl and mix until crumbly.
  • Once the sweet potatoes are cooked, top them with the streusel topping and bake for an additional 10 minutes, or until the topping is golden brown and crispy.
  • Serve the sweet potatoes warm with a dollop of sour cream or whipped cream.

Conclusion:

These streusel-pecan sweet potatoes are a delicious and easy side dish that is perfect for any occasion. They are packed with flavor and have a crispy streusel topping that is sure to please everyone at the table. Serve them at your next holiday gathering or potluck and watch them disappear!
