STRAWBERRY JELLO CHEESECAKE WITH PRETZEL CRUST

Strawberry Jello Cheesecake with Pretzel Crust image

We had this growing up, so nostalgia wells up again! Make sure to use the thinner pretzels, because the big fat ones don't crush down as much as you're looking for. TIME DOESN'T INCLUDE REFRIGERATION TIME!

Time 35m

Number Of Ingredients 9

2 c crushed pretzels
3 Tbsp sugar
1/2 c unsalted butter, melted
2 pkg (8 oz ea) cream cheese, softened
1 c sugar
8 oz container of cool whip
6 oz package strawberry jello
1 1/2 c boiling water
16 oz package frozen sliced strawberries

Steps:

  • 1. Preheat oven to 350 degrees F. Mix together the pretzels, 4 tablespoons sugar and melted butter. Press into the bottom of a 10 inch spriingform pan. Bake for 10 minutes. Set aside to cool completely.
  • 2. Beat together the cream cheese and sugar until no lumps are left. Fold in the Cool Whip. Spread over the COMPLETELY COOLED crust. Make sure you spread completely to the sides of the pan, to keep the jello layer from seeping into the crust. Refrigerate for at least 30 minutes to an hour.
  • 3. Meanwhile, make the strawberry layer. Stir together the gelatin mix and boiling water in a medium sized bowl. Add the frozen frozen strawberries, and stir until they thaw and the mixture is partially set. Put the bowl in the fridge for another 15-20 minutes until thickened but not completely set.
  • 4. NOTE: If your frozen strawberries are whole, this recipe works better if you slice them before adding to the jello. They should be easy to slice, even when frozen.
  • 5. Spoon the Jello layer over the cream cheese layer. Refrigerate until completely chilled and the jello is fully set. This will take at least 1 hour.
  • 6. Right before serving, remove the sides from the pan. If desired, you can decorate the top with whipped cream and a sprig of mint.

Strawberry Pretzel Jello
Ingredients:
3/4 cup butter, softened
3 Tbsp. brown sugar
2 1/2 cups crushed pretzels
1 (6 oz) pkg. strawberry flavored gelatin
2 Cups boiling water
2 (10 oz) pkg. frozen strawberries sliced
1 (8 oz) pkg. cream cheese
1 cup white sugar
1 (8 oz) container cool whip, thawed

Steps:

  • Preheat oven to 350 degrees. Cream butter and brown sugar. Mix in pretzels and pat mixture into the bottom of one 9 x 13 inch baking dish. Bake at 350 degrees for 10 - 12 minutes and set aside to cool. In a small bowl, beat the cream cheese and sugar together until smooth. Fold in the cool whip. Spread mixture over the top of cooled crust, making sure to seal the edges. Chill 20 min. While the crust and cream cheese mixture are chilling, dissolve the gelatin in the boiling water and stir in the strawberries. Chill until partially thickened. About 20 min. Pour the gelatin mixture over the cream cheese layer. Chill until firm. (2 hours, or overnight)

Tips:

  • Use fresh, ripe strawberries. This will ensure the best flavor and texture in your jello.
  • Be careful not to overcook the strawberries. They should be cooked until they are softened but still hold their shape.
  • Use a high-quality gelatin. This will help the jello set properly and give it a smooth, creamy texture.
  • Let the jello cool completely before serving. This will help it to set properly and prevent it from melting.
  • Serve the jello with whipped cream or ice cream. This will add a delicious and creamy topping to the jello.

Conclusion:

Strawberry pretzel jello is a classic dessert that is perfect for any occasion. It is easy to make and can be tailored to your own preferences. With a few simple tips, you can make a delicious and impressive strawberry pretzel jello that will be a hit with everyone who tries it.
