2 cups finely crushed pretzels (about 6 ounces)
3/4 cup sugar, divided
3/4 cup butter, melted
2 cups boiling water
1 package (6 ounces) strawberry gelatin
1 pound fresh strawberries, chopped
2 packages (8 ounces each) cream cheese, softened
1 tablespoon grated lime zest
1/4 cup lime juice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. Place crushed pretzels and 1/4 cup sugar in a small bowl; stir in melted butter. Spread out in an ungreased 15x10x1-in. baking pan. To toast, bake until golden brown, 9-11 minutes. Cool completely., Meanwhile, in a bowl, add boiling water to gelatin; stir 2 minutes to completely dissolve. Gently stir in strawberries. 8 cups coarsely chopped fresh strawberries
¾ cup sugar, divided
2 tablespoons cornstarch
1 tablespoon lime zest
1 tablespoon fresh lime juice
Crust and Crumble Dough (recipe follows)
1 cup plus 3 tablespoons unsalted butter, softened
1 large egg yolk
2 cups all-purpose flour
⅔ cup old-fashioned oats
1 cup sugar
1½ teaspoons baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 375°.
  • In a large bowl, gently stir together strawberries and ½ cup sugar; let stand for 10 to 15 minutes.
  • Drain strawberries, discarding liquid. Stir cornstarch, lime zest and juice, and remaining ¼ cup sugar into berries. Pour mixture onto prepared Crust and Crumble Dough in pan; crumble reserved dough onto berries.
  • Bake until top is lightly browned and filling is hot and bubbly, 45 to 50 minutes. Let cool completely in pan on a wire rack. Using excess parchment as handles, remove from pan before cutting into bars. Store in an airtight container for up to 2 days.
  • Spray a 13x9-inch baking pan with baking spray with flour. Line pan with parchment paper, letting excess extend over sides of pan.
  • In a large bowl, beat butter and egg yolk with a mixer at medium speed until smooth and creamy. In a medium bowl, whisk together flour, oats, sugar, baking powder, and salt. Gradually add flour mixture to butter mixture, beating just until combined.

The recipe says it serves 36, but you can't eat just one of these delicious, tangy lime bars. You can omit the glaze and sprinkle with powdered sugar if that's your preference.

½ cup confectioners' sugar
½ teaspoon salt
1 cup butter
4 eggs
⅓ cup lime juice
¼ cup all-purpose flour
2 cups white sugar
2 teaspoons grated lime peel, or more to taste
½ teaspoon baking powder
1 drop green food coloring, or as desired
1 ½ cups confectioners' sugar
1 tablespoon lime juice
1 teaspoon grated lime peel

Steps:

1 tablespoon baking powder
1/2 cup heavy cream
2 tablespoons turbinado sugar
1 1/2 cups powdered sugar
