SPRINGTIME ASPARAGUS, STRAWBERRY, & ARUGULA SALAD RECIPE - (4.7/5)

Springtime Asparagus, Strawberry, & Arugula Salad Recipe - (4.7/5) image

Provided by laurenzembron

Number Of Ingredients 10

15 spears asparagus, preferably organic, woody end trimmed and spears cut into 2-inch pieces
3 teaspoons extra virgin olive oil, divided
Kosher salt and freshly ground black pepper to taste
2 teaspoons lemon juice, freshly squeezed
1/2 teaspoon country Dijon mustard
1/2 teaspoon honey
2 big handfuls baby arugula, preferably organic
1/2 cup strawberries, hulled and sliced, preferably organic
2 tablespoons blue cheese, freshly crumbled
1 tablespoon toasted almonds, sliced

Steps:

  • Preheat oven to 400°F. Toss asparagus pieces with 1 teaspoon olive oil and season to taste with salt and pepper. Lay out in an even layer on a baking sheet and roast until tender, about 15 to 20 minutes. Meanwhile, make the dressing: in a sealable jar (or small bowl) combine the remaining 2 teaspoons olive oil, lemon juice, mustard, and honey. Shake (or whisk) until emulsified; season to taste with salt and pepper. Toss the arugula with the dressing, and then gently toss in the sliced strawberries and asparagus. Top salad with blue cheese crumbles and sliced almonds.

Tips:

  • Choose the ripest, sweetest strawberries. This will ensure that your salad is bursting with flavor.
  • Look for asparagus that is thick and green. Avoid any spears that are thin or woody.
  • To roast the asparagus, toss it with olive oil, salt, and pepper, then roast at 425 degrees Fahrenheit for 10-12 minutes, or until tender.
  • To make the dressing, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
  • To assemble the salad, combine the roasted asparagus, strawberries, goat cheese, and walnuts in a large bowl. Drizzle with the dressing and toss to coat.
  • Serve immediately.

Conclusion:

This strawberry asparagus salad is a delicious and refreshing way to enjoy the flavors of spring. The roasted asparagus adds a smoky flavor to the salad, while the strawberries and goat cheese provide a sweet and creamy contrast. The walnuts add a crunchy texture and the balsamic vinaigrette dressing ties all of the flavors together. This salad is perfect for a light lunch or dinner, and it can also be served as a side dish.
