Time 35m

Yield 6 servings

Number Of Ingredients 11

1/2 cup extra-virgin olive oil
1/3 cup champagne vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 large red onion, sliced
One 5-ounce container baby arugula
1 cup sliced strawberries
1/2 cup toasted pine nuts
1/3 cup freshly grated Parmesan

Steps:

  • Add the olive oil, champagne vinegar, Dijon mustard, honey, salt and pepper to a large serving bowl. Whisk to combine, then add the sliced onions. Stir the onions to coat them in the dressing. Let the onions marinate in the dressing until they are brighter in color and slightly softened, 15 to 20 minutes.
  • Add the arugula and strawberries to the bowl with the marinated onions. Toss to combine. Top with the toasted pine nuts and freshly grated Parmesan. Serve immediately.

Tips:

  • Choose fresh, ripe strawberries for the best flavor.
  • Use a variety of greens for a more interesting salad. Arugula, spinach, and watercress are all good choices.
  • Don't be afraid to add other fruits or vegetables to the salad, such as blueberries, goat cheese or nuts.
  • Make sure to use a good quality feta cheese. Feta made from sheep's milk is particularly flavorful.
  • For a more tangy dressing, use a balsamic vinaigrette instead of a lemon vinaigrette.
  • Serve the salad immediately after making it, so the greens don't wilt.

Conclusion:

Strawberry arugula salad with feta is a delicious and refreshing salad that is perfect for a light lunch or dinner. It is also a great way to use up fresh strawberries. The combination of sweet strawberries, peppery arugula, and tangy feta cheese is simply irresistible. So next time you are looking for a healthy and flavorful salad, give this one a try. You won't be disappointed!
