1 1/2 cups granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter, plus more for buttering the pan, slightly softened
3 large eggs
1/2 cup sour cream
1 teaspoon almond extract
1 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 pound strawberries, hulled, half sliced and half cut in half
1/4 cup brown sugar
1 1/2 tablespoons all-purpose flour
1 tablespoon salted butter, cold and cubed
1/4 teaspoon kosher salt
1/4 cup sliced almonds
1 cup confectioners' sugar
1 tablespoon plus 1 teaspoon lemon juice

Steps:

  • For the cake: Preheat the oven to 325 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream together the granulated sugar and butter. Add the eggs 1 at a time, mixing after each addition. Add the sour cream and almond extract and mix to combine. Turn the mixer to low and gradually add the flour and salt and mix until well combined, scraping the bowl. Fold in the sliced strawberries.

1/2 cup powdered sugar
1 cup all-purpose flour
1/2 cup Fisher Nuts almonds, ground*
3/4 cup strawberry preserves
4 oz cream cheese, softened
1/2 cup powdered sugar
1/4 tsp almond extract
1/4 cup Fisher Nuts sliced almonds

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine the melted butter with flour, powdered sugar, and ground almonds. Mix until crumbly. Press into the bottom of 13x9 baking dish.
  • Spread the strawberry preserves into the bottom of the crust, being careful not to touch the sides of the pan.
  • In a small mixing bowl, beat the cream cheese with powdered sugar and almond extract until smooth. Spoon it into a pastry bag (I used tip 48) and make diagonal lines onto the top of the strawberry preserves. Sprinkle with sliced almonds.

5 ounces butter, softened (about 10 tbsp)
3/4 cup brown sugar
1/2 cup sugar
2 eggs
2 cups flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 cup sliced almonds
1 cup strawberry jam

Steps:

  • Preheat oven to 350. Spray a large baking pan (approximately 8 X 12) with cooking/baking spray. Line the bottom of the pan with parchment paper.
  • In a large bowl, beat together the butter, brown sugar, and sugar. Add eggs and mix well. Mix in flour, cinnamon and baking powder, and then the almonds. The dough should be crumbly but stick together when you squeeze it.
