SKILLET PIZZA

Meet the Cook: I created this recipe during a hot spell one summer. With the temperature in the 90's every day, I didn't want to turn on the oven. So I decided to make our favorite family pizza in a skillet instead! Anyone who likes pizza, has kids or just wants a quick and simple meal would likely enjoy Skillet Pizza. It's great to take along to get-togethers, too - you can prepare it at home, then just plug in the skillet when you arrive. -Darlene Brenden, Salem, Oregon

STOVETOP SKILLET PIZZA

I've seen several recipes for pizza not baked in an oven but this is my easier-to-make version. Honestly, it can be cooking 5 minutes after you decide to make it. What are you waiting for? Get measuring! You're going to love how easy this is. =^..^=

Time 20m

Number Of Ingredients 10

some cooking spray
1 c all-purpose flour
3/4 tsp baking powder
1/2 tsp salt
1 tsp (heaping) dried yeast
1 tsp honey or white sugar
2/3 c lukewarm water
some pizza sauce (whatever you like or homemade)
some pizza toppings (your choice)
some shredded mozzarella cheese (again, your choice)

Steps:

  • 1. Find a medium-sized deeper skillet with a lid. (Any other size may change the cooking time, but just watch carefully. It's all good.) Mist it well with cooking spray.
  • 2. Add flour, baking powder, salt, yeast, and sugar (if using) to the skillet. Stir together.
  • 3. Pour in lukewarm water (warm like "baby bath water") and honey, if you're using that instead of the sugar. Stir together, then spread over the bottom of the skillet.
  • 4. Top crust dough with sauce, toppings, and cheese.
  • 5. Put the skillet on the stove & cover with a lid. Turn the heat to MEDIUM and the timer to 5 minutes.
  • 6. When the timer goes off, tilt the lid a little to vent, turn the heat down to MEDIUM-LOW, and set the timer for 10 minutes.
  • 7. At this point, lift the bottom edge of the pizza to look at the crust. If you have a gas stove, it might be browned enough for your liking. If you have an electric stove, you might need more time. Serve or cover (but still vent) and reset the timer. Just a suggestion... When you figure out what times & settings work best for your stove, note them down for next time. (My old electric stove takes 5 minutes on MEDIUM, then about 13 minutes on one notch lower than MEDIUM.) =^..^=
  • 8. Once the bottom of the crust meets with your approval, loosen the sides of the pizza, if necessary, and slide it out of the skillet and onto a cutting board. Slice & serve!

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 9

4 tablespoons extra-virgin olive oil
1 pound sweet or hot Italian sausage, sliced into thin rounds (about 8 links)
2 tablespoons unsalted butter, softened
1 pound fresh pizza dough, at room temperature
10 ounces whole milk low-moisture mozzarella, thinly sliced
1 cup your favorite marinara sauce or 1 1/2 cups crushed and strained San Marzano tomatoes
3 cloves garlic, minced
1 tablespoon dried oregano
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Heat a skillet over medium-high heat with 2 tablespoons olive oil. Cook the sausage rounds until they turn brown on each side, 8 to 10 minutes.
  • Grease the inside of a 12-inch cast-iron skillet with the butter. Place the pizza dough in the center and spread evenly towards the bottom edge and 1 1/2 inches up the sides.
  • The order of topping layers is very important to achieving a crisp bottom pizza crust. Begin with the sausage. Evenly lay the sausage on the dough, followed by the mozzarella and marinara. Sprinkle the garlic and oregano on top. Finish with the Parmesan and drizzle with the remaining 2 tablespoons olive oil.
  • Place the skillet pizza on the bottom rack of the oven and cook until the edge of the crust is golden brown and crusty, 30 to 35 minutes. Remove and let rest for 5 minutes before serving.
