Time 35m

Number Of Ingredients 15

1 pkg spaghetti or thin spaghetti noodles
2 boneless skinless chicken breasts
veggies of your choice (we used 3 cups of frozen stir fry veggies)
SAUCE
1 c chicken broth
6 Tbsp Hoisin sauce
6 Tbsp soy sauce, low sodium
2 Tbsp Teriyaki sauce
2 Tbsp rice vinegar
2 Tbsp brown sugar, lightly packed
1/2 tsp hot sauce (or a sprinkle of hot pepper flakes)
2 tsp pure sesame oil
2 tsp ginger paste
1 Tbsp corn starch
1 Tbsp cold water

Steps:

  • 1. Cut up your chicken into bite-sized pieces and add them to a wok or large frying pan. Cook all the way through.
  • 2. In a separate pot cook the noodles to al dente (just a minute short of the directions). Drain and set aside.
  • 3. In a small saucepan, add all of the ingredients for the sauce except for the corn starch and the water. Bring to a boil.
  • 4. Once it is boiling, mix the corn starch and water together. Add to the sauce stirring until it has thickened. Reduce to low and cover.
  • 5. In the Wok/frying pan add your veggies and half the sauce and cook the veggies through. Once they are no longer raw add the pasta and the rest of the sauce. Toss it all together. Once it's all warm and has had a few minutes to get all the flavors happy together, dish up and serve!!

Tips:

  • Mise en Place: To ensure a quick and smooth stir-frying process, prepare all your ingredients and sauces beforehand.
  • Use a Wok or Large Skillet: A wok or large skillet allows for even heat distribution and prevents overcrowding, ensuring your noodles and chicken cook evenly.
  • High Heat: Stir-frying requires high heat to achieve the characteristic charred flavor and texture. Make sure your wok or skillet is adequately preheated before adding the ingredients.
  • Stir Constantly: Continuous stirring is crucial for even cooking and preventing the ingredients from sticking to the pan.
  • Don't Overcrowd the Pan: Avoid overcrowding the pan with ingredients, as this can result in uneven cooking and a soggy dish. Cook in batches if necessary.
  • Cook the Noodles Separately: To prevent the noodles from becoming mushy, cook them separately according to the package instructions and drain thoroughly before adding them to the stir-fry.
  • Use Fresh and High-Quality Ingredients: Fresh vegetables, tender chicken, and flavorful sauces contribute to the overall taste and quality of your stir-fry.
  • Add Aromatics: Aromatics like ginger, garlic, and scallions provide a flavorful base for your stir-fry. Sauté them in hot oil before adding other ingredients.
  • Use a Combination of Sauces: Combining different sauces, such as soy sauce, oyster sauce, and rice wine, adds complexity and depth of flavor to the stir-fry.
  • Adjust the Sauce to Your Preference: Taste the sauce and adjust the seasonings according to your personal preference. You can add more soy sauce for saltiness, rice vinegar for acidity, or sesame oil for a nutty flavor.

Conclusion:

Creating a delicious stir-fry chicken lo mein at home is a rewarding experience that allows you to customize the flavors and ingredients to your liking. By following these tips and the detailed recipe steps, you can master the art of stir-frying and impress your family and friends with a flavorful and satisfying meal.
