1 tablespoon minced garlic (from 2 to 3 cloves)
1 tablespoon minced fresh ginger (from a 1-inch piece)
1 cup peeled, chopped fresh pineapple
3 scallions, cut into 1-inch pieces (1 cup)
2/3 cup apricot jam or orange marmalade
3 tablespoons distilled white vinegar, plus more for serving

Steps:

  • Season shrimp with salt and pepper. Heat a large, heavy skillet (preferably cast iron) over high; swirl in 2 tablespoons oil. 2 tablespoons red wine vinegar
2 tablespoons sugar or 2 teaspoons Splenda sugar substitute
1 teaspoon light soy sauce
1 teaspoon fresh ginger, grated
2 garlic cloves, minced

1 lb large shrimp, peeled and deveined
3 tablespoons flour (just enough to very lightly coat the shrimp)
3 teaspoons canola oil, divided
1 medium red pepper, cored and thinly sliced

1/2 cup pineapple chunk
