Yield Makes 6 servings

Number Of Ingredients 9

4 tablespoons grapeseed oil or corn oil, divided
1 1/2 pounds broccolini, bottom 1 inch of stems trimmed
1/2 cup water, divided
1 medium onion, chopped
2 small dried red chiles (such as chiles de árbol), seeded, chopped
3 garlic cloves, minced
2 tablespoons fish sauce (such as nam pla or nuoc nam)
1 teaspoon sugar
1 teaspoon freshly ground black pepper

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over high heat. Add broccolini; sauté 1 minute. Add 1/4 cup water; cook, turning with tongs, until broccolini is crisp-tender, about 5 minutes. Transfer to bowl and set aside.
  • Add remaining 2 tablespoons oil to same skillet and heat over medium-high heat. Add onion; sauté until soft and beginning to brown, about 4 minutes. Add chiles and garlic; stir 30 seconds. Add remaining 1/4 cup water, fish sauce, sugar, and pepper. Return broccolini to skillet and cook, stirring occasionally, until heated through. Season with salt and pepper.

Tips:

  • Choose the right broccolini: Look for broccolini with tender stems and deep green florets. Avoid any bunches that have yellow or wilted leaves.
  • Trim the broccolini properly: Cut off the tough ends of the stems, about 1 inch from the bottom. Then, cut the broccolini into 2-3 inch pieces.
  • Blanch the broccolini: Blanching helps to preserve the broccolini's bright green color and crisp texture. To blanch the broccolini, bring a large pot of salted water to a boil. Add the broccolini and cook for 1-2 minutes, or until the florets are bright green and the stems are tender. Immediately remove the broccolini from the boiling water and plunge it into a bowl of ice water to stop the cooking process.
  • Use a hot wok: A hot wok is essential for stir-frying. Make sure your wok is heated over high heat before adding the oil and broccolini.
  • Stir-fry in batches: If you're cooking a large amount of broccolini, stir-fry it in batches. This will help to prevent the broccolini from steaming instead of stir-frying.
  • Don't overcook the broccolini: Broccolini should be cooked just until it is tender-crisp. Overcooked broccolini will be mushy and lose its flavor.
  • Season to taste: Once the broccolini is cooked, season it with salt, pepper, and your favorite seasonings. You can also add a squeeze of lemon juice or a drizzle of soy sauce.

Conclusion:

Stir-fried broccolini is a quick, easy, and healthy dish that is perfect for a weeknight meal. It is also a great way to get your daily dose of vegetables. With its bright green color and crisp texture, stir-fried broccolini is a delicious and nutritious addition to any meal.
