Yield Serves 2

Number Of Ingredients 18

For the beef
2 teaspoons soy sauce
1/4 teaspoon sugar
1/4 teaspoon salt
3/4 pound boneless sirloin, cut across the grain into 1/4-inch-thick slices
For the sauce
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon medium-dry Sherry or Scotch
1/4 cup chicken or beef broth or water
1 teaspoon sugar
2 teaspoons Oriental sesame oil
3 tablespoons vegetable oil
1 tablespoon minced peeled fresh gingerroot
1 tablespoon minced garlic
a 4-inch fresh red chili, seeded and minced (wear rubber gloves) or 1/2 tablespoon dried hot red pepper flakes
1 pound broccoli, cut into flowerets and the stems peeled and cut into 1/2-inch-thick
cooked rice as an accompaniment

Steps:

  • Prepare the beef:
  • In a small bowl stir together the soy sauce, the sugar, and the salt, add the beef, and let it marinate for 20 minutes.
  • Make the sauce while the beef is marinating:
  • In a small bowl dissolve the cornstarch in the soy sauce and stir in the Sherry, the broth, the sugar, and the sesame oil.
  • Heat a wok or large heavy skillet over high heat until it is hot, add 2 tablespoons of the vegetable oil, and heat it until it just begins to smoke. Stir-fry the beef in the oil in batches for 1 minute, or until it is no longer pink, and transfer it as it is cooked with a slotted spoon to a plate. Add the remaining 1 tablespoon vegetable oil to the wok, heat it until it is hot but not smoking, and in the oil stir-fry the gingerroot, the garlic, and the chili for 30 seconds, or until the mixture is fragrant. Add the broccoli and stir-fry the mixture for 1 minute. Add 1/3 cup water and steam the broccoli, covered, for 1 1/2 to 2 minutes, or until it is crisp-tender. Stir the sauce, add it to the wok with the beef and any juices that have accumulated on the plate, and cook the mixture, stirring, for 2 minutes, or until the sauce is thickened and the beef is heated through. Transfer the mixture to a heated platter and serve it with the rice.

Time 40m

Yield 4

Number Of Ingredients 15

2 (3 ounce) packages ramen noodles (exclude seasoning packets)
2 tablespoons vegetable oil, divided
¾ cup water
3 tablespoons oyster sauce
1 tablespoon low-sodium soy sauce
1 tablespoon cornstarch
1 teaspoon white sugar
½ teaspoon toasted sesame oil
2 ½ tablespoons vegetable oil, divided
½ pound broccoli florets
⅓ cup water
3 large cloves garlic, finely chopped
2 tablespoons minced fresh ginger
1 pound flat iron steak, thinly sliced across the grain
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a saucepan of salted water to a boil. Break each ramen noodle block into 4 pieces and cook, stirring occasionally, until just tender, about 3 minutes. Drain noodles in a colander and rinse under cold water.
  • Heat 1 tablespoon oil in a 12-inch nonstick skillet (with lid) over medium-high heat until shimmering. Spread noodles evenly to cover bottom of skillet. Cook noodles, pressing on them occasionally with a slotted spatula, until underside is golden brown, 3 to 6 minutes. Slide ramen cake onto a large plate, invert a second plate over top, then flip cake over (so cooked side is now on top). Add remaining tablespoon oil to skillet. Slide ramen cake back into skillet and cook over medium-high heat, pressing it occasionally, until underside is golden brown, 3 to 5 minutes. Slide ramen cake onto a baking sheet and keep warm in oven (do not clean skillet).
  • While ramen cake cooks, whisk together water, oyster sauce, soy sauce, cornstarch, sugar, and sesame oil (if using).
  • Heat 1 tablespoon oil in same skillet over medium-high heat until shimmering. Add broccoli and stir-fry 1 minute. Add water and cook, covered, over medium heat until crisp-tender, 2 to 3 minutes. Transfer broccoli to a bowl and wipe out skillet.
  • Heat remaining 1 1/2 tablespoons oil in skillet over medium-high heat until shimmering. Stir-fry garlic and ginger 10 seconds. Add beef and salt and stir-fry until beef is browned, about 2 minutes.
  • Stir sauce, then add to skillet and bring to a boil, stirring. Add broccoli and cook, stirring, until heated through, about 30 seconds. Remove from heat.
  • Slide ramen cake onto a cutting board and cut into quarters. Top each ramen wedge with 1 cup beef-broccoli mixture.

STIR-FRIED BEEF AND BROCCOLI - EMERIL LAGASSE RECIPE - (4.4/5)

Stir-Fried Beef and Broccoli - Emeril Lagasse Recipe - (4.4/5) image

Provided by ranmcm

Number Of Ingredients 13

2 tablespoons minced garlic
4 teaspoons grated ginger
4 teaspoons Chinese black vinegar (I used dark red wine vinegar)
2 tablespoons soy sauce
3 teaspoons hoisin sauce
3 teaspoons orange blossom honey
4 tablespoons peanut oil, divided
2 pounds beef flap steak, thinly sliced across the grain* (Flank or
skirt steak works)
4 tablespoons cornstarch
2 large heads broccoli, cut into florets and blanched
1 1/2 teaspoons red pepper flakes
Steamed white rice, for serving (I used brown rice)

Steps:

  • 1. Combine the garlic, ginger, vinegar, soy sauce, hoisin sauce and honey. 2. Mix well and set aside until ready to use. 3. Preheat a wok or a large skillet. 4. Once it has reached a medium heat, add 1/2 of the peanut oil. 5. Dredge the beef in the cornstarch, lightly shake off any excess cornstarch and add 1/2 of the beef to the pan. 6. Cook for 2 to 3 minutes. 7. Add 1/2 of the broccoli to the pan and shake frequently. 8. Add 1/2 of the sauce and stir to evenly coat the beef and broccoli. 9. Cook until the sauce thickens about 5 minutes. 10. Repeat the process with the other half of the ingredients. 11. Serve immediately with steamed white rice. *It will be easier to slice the beef in thin strips if it has been partially frozen. Chef's Note: this may be able to be done in 1 batch if using a very large wok or skillet.

Tips:

  • Use a wok or large skillet: A wok or large skillet will allow you to stir-fry the beef and broccoli quickly and easily.
  • Cut the beef against the grain: This will help the beef to cook evenly and tender.
  • Marinate the beef: Marinating the beef in a mixture of soy sauce, cornstarch, and oil will help to tenderize it and give it flavor.
  • Use high heat: Stir-frying is a high-heat cooking method, so make sure your wok or skillet is nice and hot before you add the beef and broccoli.
  • Stir-fry in batches: If you're cooking a lot of beef and broccoli, stir-fry it in batches so that the beef doesn't crowd the pan and cook evenly.
  • Don't overcook the beef: Beef should be cooked to an internal temperature of 145 degrees Fahrenheit for medium-rare, or 160 degrees Fahrenheit for medium.
  • Use fresh broccoli: Fresh broccoli will have a brighter color and better flavor than frozen broccoli.
  • Add the broccoli to the wok or skillet last: This will help the broccoli to stay crisp and tender.
  • Season the stir-fry to taste: Once the beef and broccoli are cooked, season the stir-fry to taste with soy sauce, oyster sauce, and black pepper.

Conclusion:

Stir-fried beef and broccoli is a quick and easy weeknight meal that is packed with flavor. It's a great way to use up leftover beef, and it's also a healthy meal that is low in calories and fat. If you're looking for a delicious and healthy stir-fry recipe, this is the one for you!
