1/2 c sugar
1/2 tsp salt
3 Tbsp corn starch
2 c milk, you can use cream if you want it richer
2 eggs
2 Tbsp butter
1 tsp almond extract
1 c whipped cream, unsweetened

Steps:

  • 1. Mix sugar, salt and cornstarch in a sauce pan and mix thoroughly. Gradually stir in milk and blend till smooth.
  • 2. Set over med. heat stirring constantly until it bubbles. Remove from heat
  • 3. In a separate bowl whisk eggs and then gradually add hot mix in, whisking while you do it to prevent the eggs from scrambling. Put the mixture back on the heat till it bubbles once again. Remove and add Almond extract and butter. Stir just till the butter in melted and combined.
  • 4. Place plastic wrap directly on the sauce to prevent a skin forming. Place in fridge till cold.
  • 5. When your ready to serve. Whip the whipping cream till stiff (don't add sugar, the sauce will have enough sweetness) fold the whip cream into the almond cream and server over Warm Date Pudding

DRY INGREDIENTS:
3/4 c soft bread crumbs
1/2 c chopped walnuts
1/2 c chopped dates
1/2 tsp baking powder
1/2 c sugar (scant)
dash salt
WET INGREDIENTS:
1/2 c milk
1 Tbsp melted butter
1 whole egg

Steps:

  • 1. Mix the dry ingredients
  • 2. Beat together the butter, milk, and eggs, then add to dry ingredients and mix well
  • 3. Butter the mold (the bowl you will be cooking the pudding in) then place the pudding mixture into the mold. Some people also line the mold with parchment paper to make it easier to get the pudding out of the mold after it is cooked.
  • 4. After wrapping the mold in buttered grease paper and aluminum foil (see BBC video below) place mold in steamer pan to steam for two or three hours til done
  • 5. An English pudding may be steamed in A. A steamer pan (similar to a double boiler with holes in the bottom of the top pan) B. A Slow cooker C. A large stock pot on the stove

  • 7. It can also be done in a slow cooker: After the pudding is wrapped (see BBC video above) place the pudding mold into the slow cooker. Pour in sufficient water to come 1/2 way up the sides of the pudding bowl. Cover and cook on HIGH for 5-7 hours. (You may need to scrunch up a bit of aluminum foil, or use an inverted saucer to lift the mold off the bottom of the crock pot.)
  • 8. No matter the method, be sure to also keep a kettle of hot water on the stove, so you can top up the hot water in the steamer pan every so often. You don't want the steamer pan to go dry, it must have water and steam in it continually to finish steaming the pudding and since steam evaporates, the water level will need to be replenished. Just keep checking it every so often. You also do not want the hot water to bubble into the mold, that would ruin the pudding, so that is why the water level must be kept at half way up the bowl (mold) and the heat must keep the water steaming but not at a rolling boil.

1 cup light molasses
3/4 cup melted butter
1/2 cup warm milk
2 eggs, beaten
1 cup all-purpose flour, plus additional for tossing fruit
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 pint candied mixed fruit (or diced dried fruit such as pineapple, pears, apples, and plums)
1 cup raisins
1 1/2 ounces brandy
Holly sprig, for garnish
Hard Sauce, recipe follows
1/4 pound butter
1 cup sugar
1 pinch salt
1 teaspoon vanilla extract
1-ounce brandy or rum

Steps:

  • Combine the molasses, butter, milk, and eggs in a mixing bowl. Next, combine the flour, baking soda, salt, cinnamon, and cloves in a large mixing bowl. Add the dry ingredients to the wet ingredients in 3 additions. Toss candied fruit and raisins lightly with flour to prevent sinking and add to batter. Stir in brandy.
  • Pour into a greased and sugared steam pudding mold and place on a rack in a large covered pot with water that comes halfway up the sides of the mold. Cover and steam for 2 hours, checking occasionally to make sure water hasn't boiled out. Let cool for 5 minutes on a rack before turning out. Dust with powdered sugar and serve with a sprig of holly and Hard Sauce.
  • Beat all ingredients together until very well combined. Serve with pudding.
