1 medium onion, chopped
3 cloves garlic, minced
2 large egg yolks
1 tablespoon Dijon mustard
1/2 teaspoon hot sauce
1 tablespoon Worcestershire sauce
2 tablespoons heavy cream
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 pound ground beef chuck
8 ounces ground pork
8 ounces ground veal
8 ounces sharp cheddar, shredded (2 1/3 cups)

2 tablespoons tomato paste
1 tablespoon balsamic vinegar
2 tablespoons water

Steps:

  • Preheat oven to 400 degrees F.

Yield Makes about 2 dozen 1 1/2 inch balls

Number Of Ingredients 8

3 tablespoons olive oil
1 onion, finely diced
8 ounces bacon, diced (about 1 1/2 cups)
2 pounds 80% lean ground beef
6 ounces cheddar cheese, grated
3 large eggs
1/2 cup bread crumbs
2 teaspoons salt

Steps:

  • Preheat the oven to 450°F. Drizzle 2 tablespoons of the olive oil into a 9 × 13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.
  • Heat the remaining 1 tablespoon olive oil in a large frying pan over medium-high heat. Add the onions and bacon and cook, stirring frequently, until the bacon has browned and the onions are translucent, about 10 minutes. Using a slotted spoon, transfer the onions and bacon to a plate and place in the refrigerator to cool.
  • Combine the ground beef, cheddar, eggs, bread crumbs, and salt in a large mixing bowl and mix by hand until thoroughly incorporated.
  • Roll the mixture into round, golf ball-size meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another.
  • Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F.
  • Allow the meatballs to cool for 5 minutes in the baking dish before serving.

CHEDDAR MEATBALLS

Cheddar Meatballs image

I've been tweaking my old meatball recipe over the years, and finally came up with a version everyone loves. And as we all know---everything's better with CHEESE! This also makes a great burger, just omit the parsley and oregano and try substituting the cheddar for pepper jack cheese.

Tips:

  • Choose the right meat: For the best flavor and texture, use a combination of ground beef and ground pork. The beef provides a bold flavor, while the pork adds richness and moisture.
  • Use fresh ingredients: Fresh herbs, spices, and vegetables will give your meatballs the best flavor. If you can, use them instead of dried ones.
  • Don't overmix the meatball mixture: Overmixing can make the meatballs tough. Mix the ingredients just until they are combined.
  • Cook the meatballs thoroughly: Make sure the meatballs are cooked all the way through before serving. This will help prevent foodborne illness.
  • Serve the meatballs with your favorite dipping sauce: A good dipping sauce can really enhance the flavor of the meatballs. Try them with a marinara sauce, a barbecue sauce, or a sour cream sauce.

Conclusion:

Whether you're making them for a party, a potluck, or just a weeknight dinner, these steak n' bacon cheddar meatballs are sure to be a hit. They're easy to make, delicious, and perfect for any occasion. So next time you're looking for a new appetizer or main course, give these meatballs a try and I assure you'll love them!
