FRESH PEA SOUP
This soup is known in France as Potage Saint-Germain, a name that comes from a suburb of Paris where peas used to be cultivated in market gardens. If fresh peas are not available, use frozen peas, but thaw and rinse them before use. Croutons make an excellent garnish!

Tips:
- Soak the split peas: Soaking the split peas overnight or for at least 4 hours will help them cook more evenly and quickly. You can also use a quick-soaking method by bringing the peas to a boil in a pot of water, then removing them from the heat and letting them sit for 1 hour before draining.
- Use a variety of vegetables: This recipe calls for green peas, carrots, and celery, but you can also add other vegetables, such as potatoes, zucchini, or spinach. Be sure to chop the vegetables into small pieces so that they cook evenly.
- Add flavor with herbs and spices: This recipe uses fresh dill, but you can also use other herbs, such as parsley, thyme, or rosemary. You can also add spices, such as salt, pepper, garlic powder, or onion powder, to taste.
- Don't overcook the soup: The soup is done when the split peas and vegetables are tender but still have a slight bite to them. Overcooking the soup will make the peas mushy and the vegetables bland.
- Serve the soup with a dollop of sour cream or yogurt: This will add a creamy richness to the soup and help to balance out the flavors.
Conclusion:
This split pea and green pea soup is a delicious and easy-to-make meal that is perfect for a cold winter day. It is also a great way to use up leftover vegetables. Serve the soup with a dollop of sour cream or yogurt, and enjoy!
