WILTED SPINACH WITH APPLES & FETA CHEESE

Steps:
- 1. I am giving you the ingredients and amounts that I used. This is the book where the original recipe came from.
- 2. Chop the green onions and mix with the baby spinach and set aside till needed.
- 3. Cook the bacon over medium high heat in a large skillet until crisp, I used a 16 inch size. Remove bacon to paper towel and set aside till needed crumble when cool enough to handle. Save about 4 tablespoons of the bacon fat in skillet.
- 4. Add the sugar and vinegar to a measuring cup or small bowl, and stir until the sugar dissolves. With heat still on medium high add the vinegar sugar mixture to the skillet, and heat until it boils. Then add the spinach and onions and toss until spinach begins to wilt, about 1 minute. Then remove from heat.
- 5. Add the bacon and toss gently to mix. Serve immediately. I made each serving from the skillet.
- 6. Then add the apples & feta and stir to mix. Serve immediately while still warm. I added the feta after I place it on the serving dish. Garnish with additional Apple slices if desired. Add a SPRINKLING OF CHOPPED CHIVE OVER EACH PLATE IF DESIRED.
- 7. Had one left over for the next days dinner. You can nuke it in the microwave if you want it to be warm.
SPINACH & FETA SAUTE
With just the right level of garlic and a pleasant mix of cheese and almonds, this quick side will brighten any plate. You could also try it stuffed in a filet. -Sharon Delaney-Chronis, South Milwaukee, Wisconsin

SPINACH SALAD WITH FETA CHEESE
I found this salad on the web and made a couple of changes in it. This was the salad I made on our 25th wedding anniversary! Update: I submitted this recipe to Taste of Home Light & Tasty and it was published in the December/January 2008 issue.

Steps:
- Combine spinach, cranberries, green onion, sliced apple, grapes and walnuts in a large salad bowl.
- Whisk together the vinegar, olive oil, garlic, salt and pepper.
- Pour the vinaigrette over salad, sprinkle with Feta cheese and arrange on chilled salad plates.
Tips:
- Choose fresh, tender spinach: Look for spinach with deep green leaves and no signs of wilting or yellowing.
- Wash the spinach thoroughly: Rinse the spinach several times in cold water to remove any dirt or grit.
- Use a variety of apples: Different apples will give your salad different flavors and textures. Try using a mix of sweet and tart apples, such as Granny Smith, Honeycrisp, and Fuji.
- Slice the apples thinly: This will help them to cook evenly in the salad.
- Use a good quality feta cheese: Feta cheese should be firm and crumbly, with a slightly salty flavor.
- Toast the walnuts: Toasting the walnuts will bring out their flavor and make them more crunchy.
- Make the dressing ahead of time: The dressing can be made up to 24 hours in advance. This will allow the flavors to meld together.
- Serve the salad immediately: This salad is best served fresh. The spinach will start to wilt if it sits for too long.
Conclusion:
Spinach salad with apples and feta cheese is a delicious and healthy dish that is perfect for a light lunch or dinner. It is packed with nutrients, including vitamins A, C, and K, and fiber. The apples add a touch of sweetness and crunch, while the feta cheese adds a salty and tangy flavor. This salad is also very easy to make, and it can be tailored to your own taste preferences.
