1 (10 ounce) package frozen chopped spinach, thawed and well drained
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container sour cream
1 (10 ounce) can extra hot Ro-Tel tomatoes, drained
1 -1 1/2 cup shredded cheddar cheese
1/2 teaspoon fresh minced garlic
4 -5 scallions, chopped

Steps:

  • In a large skillet over medium heat on stovetop, brown sausage; drain.
  • Add spinach, cream cheese, and sour cream.

1 red bell pepper, finely chopped

1 package (8 oz) cream cheese, cut into cubes
1 bag (6 oz) fresh baby spinach leaves, coarsely chopped
1/4 teaspoon salt
1 can (16 oz) pinto beans, drained, rinsed
1/2 cup shredded Parmesan cheese (2 oz)

Fresh thyme sprig, if desired

Steps:

  • Heat oven to 375°F. In large skillet, cook sausage, onion and chopped bell pepper over medium-high heat 8 to 10 minutes, stirring occasionally, until pork is no longer pink; drain. Add garlic and 1 teaspoon thyme; cook 1 minute. Stir in wine; cook 2 minutes or until liquid is almost completely evaporated.

1/2 cup onion, chopped
1/2 cup sweet red pepper, chopped
2 garlic cloves, minced
2 (8 ounce) packages reduced-fat cream cheese, softened
1 1/2 cups parmesan cheese, finely shredded
1/4 cup milk
1/4 cup mayonnaise
1/4 cup light sour cream
2 cups fresh spinach leaves, chopped
1/3 cup mild banana pepper ring, drained and chopped
blue corn tortilla chips or sliced and toasted French bread

Steps:

  • In a large skillet cook sausage, onion, sweet pepper and garlic until sausage is brown, stirring often. Drain off fat. Set aside to cool.
