1 small sweet red pepper, diced
1/2 cup shredded monterey jack pepper cheese

1 5-to-6- ounce package baby spinach (about 8 cups)
1 medium red bell pepper, sliced
1 15-ounce can chickpeas, rinsed

½ cup cucumber
1 cup broccoli florets
½ cup feta cheese, crumbled
¼ red onion, chopped
2 small, cooked chicken breast, cut into small pieces
bacon bits
½ cup ranch dressing

  • Toss together spinach, cucumber, broccoli, feta, onion, chicken, and bacon in a large bowl. Pour dressing over salad, and gently toss again.
