1 teaspoon MAGIC Baking Powder
2 (300 g) packages frozen chopped spinach, thawed, squeezed dry
2 cups CRACKER BARREL Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
2 cups CRACKER BARREL Shredded Old Cheddar Cheese
1 tablespoon dried minced onion

Steps:

  • Heat oven to 350 degrees F (180 degrees C).
  • Bake butter in 9-inch square baking dish 2 minutes or until melted. Remove dish from oven; brush butter onto bottom and sides of dish.
  • Beat eggs with mixer in large bowl. Add flour, milk and baking powder; mix until blended. Stir in spinach, cheeses and onion. Spoon into prepared dish.
  • Bake 35 minutes. Let stand 15 minutes before cutting into squares.

This is my aunt Leda's recipe. My family thinks this is such a yummy quiche. I love this quiche and the fish do to. Little story behind this is we went to a family fun park when I was a kid and my aunt Leda brought this quiche. One of my crazy (silly) family members decided to use it as fish bait and it worked we all caught a fish.

1 cup flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs
1 cup milk
1/4 cup oleo (butter)
1/2 lb grated sharp cheddar cheese
1 medium onion, chopped
10 ounces frozen chopped spinach, drained

Steps:

  • Mix flour, salt, baking powder, eggs, milk, oleo, sharp cheese and onion all together.
  • Add in well-drained spinach last.
  • Bake at 350 using a square pan for 45-60 minutes.

1 package (10 oz) frozen chopped spinach, thawed & squeezed dry
3 eggs
1 lb Monterey jack cheese (or 1/2 Pepperjack & 1/2 Monterey)
1/2 onion, diced & sauteed in 1 T butter
Canadian Bacon, diced & sauteed with onions (optional)

  • Combine all ingredients thoroughly. Bake in greased 11x7 pyrex baking dish at 350° for about 30 minutes or until lightly brown on top. Let cool and cut into 16 squares for a great appetizer or into 6-8 pieces for a side vegetable of quick breakfast. Variation: replace cheeses with 6oz feta cheese and 8oz Muenster. Add 1/8 t nutmeg.
