1 1/2 tsp active dry yeast
1 c lukewarm water
1 tsp sugar
1 tsp salt
3 1/2 c all-purpose flour
TOPPING
1/2 c butter
2 c grated Parmesan cheese
1 c heavy cream
10 oz. pkg frozen spinach, thawed and drained
3 c shredded mozzarella cheese
1/2 c grated Parmesan cheese
salt and garlic to taste

Steps:

  • 1. PIZZA DOUGH: Warm medium bowl by swirling some hot water in it; Drain. Place yeast in bowl & pour on warm water. Mix in sugar with fork; let stand until yeast has dissolved & starts to foam, 5 - 10 minutes.
  • 2. Use wooden spoon to mix in salt and about one-third of flour. Mix in another third of the flour, stirring with the spoon until the dough forms a mass and begins to pull away from the sides of the bowl.
  • 3. Knead 8-10 mins on floured board, working in remaining flour a little at a time. Dough should be elastic and smooth; Form into a ball.
  • 4. Place dough in lightly oiled mixing bowl, rotating it to grease dough's surface. Cover bowl with moist towel; let stand in warm place until dough has doubled, about 40-50. (To test if risen enough, poke two fingers into dough. If indentations remain, the dough is ready.
  • 5. Punch dough with your fist to release air. Knead for 1 to 2 minutes, then divide into two balls. Pat into flat circles on a lightly floured surface. Roll to 1/4 inch larger than size of the pan for the rim of the crust.
  • 6. Place in a lightly oiled pan, folding extra dough under to make a thicker rim around the edge; brush on a light coating of olive oil.
  • 7. Preheat oven to 350 degrees F. Gently melt butter in a small sauce pan and remove from heat. Stir in Parmesan and cream. Return to heat and bring just to boil at a lowest setting - stirring frequently. Stir in spinach. Add salt and garlic to taste.
  • 8. Spoon the Alfredo and spinach onto crusts. Top with shredded mozzarella and additional Parmesan. Bake pizzas individually for 20 minutes or until bottom is nicely browned.

5 tablespoons unsalted butter, melted and kept warm
7 sheets of phyllo (each about 17 by 12 inches), stacked between 2 sheets of wax paper and covered with a dampened kitchen towel
6 tablespoons freshly grated Parmesan
1 teaspoon dried mint
1/2 cup very thinly sliced red onion
2/3 cup finely crumbled Feta
1 1/2 tablespoons olive oil

Steps:

  • In a kettle cook the spinach in the water clinging to the leaves, covered, over moderate heat for 3 to 4 minutes, or until it is just wilted, refresh it under cold water, and let it drain well in a colander while making the phyllo crust.
  • Preheat the oven to 400°F. Brush a baking sheet lightly with some of the butter, put 1 sheet of the phyllo on the butter, the brush it lightly withy some of the remaining butter. Sprinkle the phyllo with 1 tablespoon of the Parmesan, put another sheet of the phyllo on top, and press it firmly so that it adheres to the bottom layer. Butter, sprinkle, and layer the remaining phyllo in the same manner, ending with a sheet of phyllo.   • Preheat oven to 500°F.

1/2 lb bulk mild Italian sausage
1 package (8 oz) sliced baby bella mushrooms
2 cups chopped fresh spinach leaves (from 8-oz package)
1/2 cup pizza sauce (from 14-oz jar)
1 can (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet
1 cup shredded mozzarella cheese (4 oz)
1 tablespoon butter
1/4 teaspoon Italian seasoning

Steps:

  • Heat oven to 375°F. Spray large cookie sheet with cooking spray, or line with cooking parchment paper.
  • In 10-inch nonstick skillet, cook Italian sausage 6 to 8 minutes over medium heat, until no longer pink; drain. Stir in mushrooms; cook 4 to 6 minutes, stirring occasionally, until mushrooms are lightly browned and tender. Stir in spinach leaves; cook until just starting to wilt. Remove from heat; stir in pizza sauce.
  • Unroll dough on cookie sheet to 13x8-inch rectangle. Sprinkle 1/2 cup of the cheese in 3 1/2-inch-wide strip lengthwise down center of dough all the way to ends; top cheese with sausage mixture. Sprinkle with remaining 1/2 cup cheese.
  • Make cuts 1 inch apart on each side of rectangle just to edge of filling. Alternating from side to side, fold cut strips of dough at an angle halfway across filling, slightly overlapping ends.
  • In small microwavable bowl, microwave butter uncovered on High 20 to 30 seconds or until melted; stir in Italian seasoning. Brush butter mixture on top of braided crescent dough.
  • Bake 20 to 25 minutes or until deep golden brown. Let stand 5 minutes before serving. Serve with additional pizza sauce, if desired.

4 ounces Gruyere cheese, grated
2 ounces young pecorino cheese, finely grated

Steps:

  • Preheat oven to 550 degrees (or highest temperature) with a pizza stone placed on lowest rack for at least 30 minutes. Top a pizza peel with parchment paper.
  • Working with one piece of dough, flatten dough into a disk that is thicker in the center than at the edges. Using your fingers, gently pull on the edges of the dough to form a 12-inch circle; dough should still be thicker in the center. Transfer dough to prepared pizza peel.
  • Top dough with one-quarter of the cheeses, spinach, and sliced garlic. Season with pepper and drizzle with olive oil.
  • Transfer pizza along with parchment paper to pizza stone and bake until spinach is wilted and slightly browned, 10 to 12 minutes.
  • Using pizza peel, remove pizza from oven and top with one-quarter of the mint. Serve with lemon wedges. Repeat process with remaining dough and toppings.

The first time I had this pizza was the first time I let my dough sit overnight in the fridge. This is a cream-based pie, but tomato sauce works well here, too.

1 ball of homemade or store-bought pizza dough (about 1-pound/304 g)
3 ounces (85 g) fresh mozzarella, pinched into small chunks
2 cups (220 g) shredded low-moisture mozzarella
2 or 3 handfuls baby spinach
1 large clove garlic, chopped or very thinly sliced
1/2 cup (70 g) fresh sausage
1/2 cup (120 ml) heavy cream
Fine sea salt
2 large eggs
Freshly ground black pepper
2 tablespoons chopped fresh chives
Crushed red pepper flakes
Extra-virgin olive oil
3 tablespoons grated hard cheese

Steps:

  • Place your stone on the lowest shelf of your oven, then turn your oven to its highest temperature. Most ovens go to 500°F (260°C) and some to 550°F (287°C). Heat your stone for at least one hour before baking.
  • If you're taking your dough out of the fridge, give it about 15 minutes or so to warm up a bit so it will be easier to work with. It should have doubled in size in the fridge. If it hasn't, let it sit at room temperature, covered with a slightly damp towel, until it does.
  • Lightly flour your counter and your hands. Flip the dough into the flour bowl so the top side of the dough ball gets dusted first. Flip it once more, making sure that the dough is completely coated. Press the dough down into the flour, then pick it up and place it on the floured countertop.
  • Pressing your fingers firmly into the dough, start by flattening the center and work your way out toward the edge to make it wider, until it's about 7 to 9 inches (17 to 23 cm) wide. Pushing down on the dough will release some of the gas and actually begin opening up the dough. Be careful not to disturb the outermost lip. This will eventually become your crust.
  • The next step is a bit tricky. Your goal is to take this disc of dough and carefully stretch it to about 14 to 16 inches (35.5 to 40.5 cm) without tearing it or creating a hole. I pick it up with floured hands and begin to gently stretch it over my fists, letting gravity do most of the work.
  • Once you've stretched it enough, put the dough back on the counter, making sure there is a generous dusting of flour underneath. Take a few generous pinches of semolina flour and dust your pizza peel. Make sure it's coated evenly. Gently lift and transfer your dough to the peel. Make sure both your hands and the peel are well-floured. You are now ready to dress your pie.
  • Start by adding both mozzarellas to the dough, followed by the spinach and garlic. Add the sausage. Top with the cream and season with salt. Transfer to the oven. Bake for 3 minutes, then open the oven, pull out the rack with the baking stone, crack the eggs into the center of the pizza, and season them with salt and pepper. Push the rack back into the oven, close the door, and finish baking.
  • The crust will rise significantly. Then change the oven setting from bake to broil, cooking the pizza from the top down until the crust begins to blister. The residual heat of the stone will continue to cook the bottom. (If your broiler is at the bottom of your oven, skip this step and continue to bake the pizza as described.) I cook all my pizzas until they're well done, which could take up to 10 minutes total (sometimes less). Just keep checking so you don't burn it. Look for the cheese to color and the crust to turn deep brown. It may blacken in spots, and that's okay.
  • When the pizza is done, remove it from the oven and finish with the chives, a pinch or two of crushed red pepper flakes, a drizzle of olive oil, and the grated hard cheese.

CHICKEN & SPINACH ALFREDO PIZZA

This is my favorite homemade pizza; these are the basic toppings though I vary sometimes depending on what's on hand. I make the dough in my bread machine and add a little garlic powder and basil or italian seasonings to the dough ingredients for extra flavor. Some measurements are approximate.

1 pizza dough
1 cup prepared alfredo sauce
1 (10 ounce) package frozen chopped spinach, cooked and drained
2 -3 boneless chicken breasts, cooked or grilled and diced
1/2 medium sweet onion, thinly sliced
1/3 cup sliced black olives, well drained
2 -3 tablespoons feta cheese, crumbled
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Roll dough out thin; put on lightly greased cookie sheet and prick holes all over to minimize bubbling.
  • Prebake the pizza dough at 425°F for 5-7 minutes, remove from oven.
  • Spread alfredo sauce to within 1" of edges.
  • Top with chicken, spinach, onion, feta and olives, then mozzarella and parmesan last.
  • If you like you can brush some olive oil around the edges of the crust.
  • Return to oven and bake at 425°F for 10-12 minutes or until done and bottom is browned.
  • Remove from oven and let stand a few minutes before slicing.
  • Delicious and even better warmed up the next day; I have also added mushrooms when I had them on hand.
