2 eggs
1 ½ cups crumbled feta cheese
¼ teaspoon garlic powder
¼ teaspoon salt, or to taste
2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
2 slices cooked bacon, crumbled
1 (17.5 ounce) package frozen puff pastry, thawed
½ cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  • Beat eggs in a bowl using a fork or whisk; stir in feta cheese, garlic powder, and salt. Add spinach and bacon and mix well.
  • Unfold pastry sheets onto a lightly floured surface. Top each sheet with 1/2 of the spinach mixture and spread evenly. Starting with the short side, roll each like a jelly roll around the filling. Place rolls on a plate and freeze until firm, about 15 minutes.
  • Cut each roll into 20 slices using a sharp knife. Arrange slices onto the prepared baking sheet and top each with Parmesan cheese.
  • Bake in the preheated oven until pastries are golden brown, about 15 minutes. Transfer pastries to a wire rack to cool, about 10 minutes.

SPINACH AND FETA PINWHEELS

Spinach and Feta Pinwheels image

When I flew out to my friend's wedding I was asked if I had any ideas for appetizers for the event 2 days away. So, I turned to an old standby....the pinwheel. I had made Mexican and Seafood many times but this one was new. It is an easy, tasty treat. The filling can also be used for a dip with pita chips or crackers.

STEAK, SPINACH & FETA PINWHEELS RECIPE - (4.6/5)

MARINADE:
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup red wine
1/4 cup Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 clove garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon ground black pepper
1 1/2 pounds flank steak, butterfly (or pound) to 1/2 inch thickness
FINAL PREPARATION:
1/2 teaspoon salt
2 cloves garlic, minced
1/4 cup onion, chopped
1/4 cup fine dry bread crumbs
1 cup frozen chopped spinach, thawed and squeezed dry
1/2 cup crumbled feta cheese (seasoned is ok for some extra pop)

Steps:

  • Marinade: In a gallon or bigger zipper bag, combine the list of Marinade ingredients. Pierce the flank steak with a knife, making small slits about 1 inch apart. Place the steak into the bag, make sure everything is mixed and all the meat is covered, then seal. Put in the fridge overnight. Final Preparation: Preheat oven to 350°F. Remove the steak from the bag and place on a working surface so that it is wider than tall. Optional, keep the marinade to baste the final log. Sprinkle the steak with the salt, then spread each ingredient across the steak in a single layer: garlic, onion, feta, spinach and bread crumbs. Tightly roll the meat away from you into a log. If it's thin enough, it will form a jelly roll shape. Worst case (like I usually do), you end up with more a 'meat taco'. It still tastes great though. Anyways, once rolled, secure with tooth picks, or kitchen twine (recommended). Place log in a greased casserole dish, seam up (especially if it's a 'taco'). If you saved the marinade, pour some of it over the log for extra flavor. Bake uncovered for 60 minutes, or until it reaches 145°F. Let it rest for 5 minutes before cutting.

Tips:

  • Prep the Spinach: Before using, make sure to wash and thoroughly dry the spinach to prevent excess moisture from altering the texture of the pinwheels.
  • Choose Quality Feta: Opt for a high-quality feta cheese that crumbles easily and has a tangy, flavorful taste.
  • Evenly Distribute Filling: When spreading the spinach-feta mixture onto the tortillas, ensure it's evenly distributed to prevent any areas from being too thick or thin.
  • Tight Rolling: Roll the tortillas tightly to prevent the filling from spilling out during baking.
  • Chilling Before Baking: Refrigerate the pinwheels for at least 30 minutes before baking. This helps them hold their shape better and ensures even cooking.
  • Baking Temperature: Bake the pinwheels at a high temperature (400°F/200°C) for a short duration (15-20 minutes) to achieve a crispy exterior and a warm, melted center.
  • Serving Suggestions: Serve the pinwheels warm as an appetizer or snack, accompanied by your favorite dipping sauce. They can also be served as a main course with a side salad.

Conclusion:

Spinach feta pinwheels are a delightful and versatile dish that can be enjoyed as an appetizer, snack, or main course. With a combination of fresh spinach, tangy feta cheese, and crispy phyllo dough, these pinwheels offer a burst of flavor and a satisfying crunch. Whether you're hosting a party or simply looking for a tasty treat, these easy-to-make pinwheels are sure to impress. Their vibrant color and delightful taste make them a perfect addition to any gathering or meal.
