2 tablespoons butter
2 tablespoons chopped onion
1 (16 ounce) package frozen chopped spinach, thawed and drained
3 eggs
1 ½ cups heavy cream
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground nutmeg
½ cup shredded Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. 1 1/4 cups milk (use skim or 2% if you wish)

  • Stir fry the spinach in half the butter until it is just limp, drain and keep warm.
