CRISPY SOUTHERN FRIED CATFISH

Crispy Southern Fried Catfish image

Simple is best, and this Southern Fried Catfish is no exception. The easy dinner recipe only requires a handful of pantry staples and it's ready about 20 minutes!!!

Provided by Blair Lonergan

Categories     Dinner

Time 20m

Number Of Ingredients 9

4 catfish fillets ((about 3-4 ounces each))
1 cup yellow cornmeal
1 tablespoon seasoned salt ((I use Lawry's brand))
¼ teaspoon pepper
¼ teaspoon garlic powder
1 cup milk
3 tablespoons vegetable oil
3 tablespoons butter
Optional garnish: lemon wedges and fresh parsley

Steps:

  • Combine cornmeal, seasoned salt, pepper, and garlic powder in a shallow dish.
  • Pour milk into a separate dish.
  • Heat oil and butter in a large skillet over medium heat.
  • Dip a catfish fillet in the milk, and shake off any excess.
  • Transfer milk-soaked fish to the cornmeal mixture and gently roll to coat on both sides.
  • Repeat with remaining fillets.
  • Place fish in the hot skillet and cook until golden brown on each side (about 5-7 minutes per side). The fish will flake easily with a fork when it's done.
  • Depending on the size of your skillet, you may need to cook the fish in batches. Don't overcrowd the skillet! Feel free to wipe out the pan and use additional butter/oil, as necessary, for subsequent batches.
  • Drain fish on paper towels.
  • Serve warm, garnished with chopped fresh parsley and a lemon wedge, if desired.

BLACKENED CATFISH

Blackened Catfish image

Provided by Food Network

Yield 6 servings

Number Of Ingredients 12

3/4 pound (3 sticks) unsalted butter, melted
Six 8- to 10-ounce Catfish fillets (or other firm-fleshed fish), 1/2-inch thick
3 tablespoons Chef Paul Prudhomme's Blackened Redfish Magic (or substitute)
1 tablespoon sweet paprika
2 1/4 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground red pepper
3/4 teaspoon white pepper
3/4 teaspoon black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves

Steps:

  • The fillets should be at room temperature. Heat a large cast-iron skillet over very high heat until it is beyond the smoking stage and you see white ash in the skillet bottom, at least for 10 minutes. Meanwhile, pour 2 tablespoons melted butter in each of 6 small ramekins; set aside and keep warm. Reserve the remaining butter. Heat the serving plates in a 250-degree oven. Dip each fillet in the reserved melted butter so that both sides are well coated. Then, mix thoroughly all the spices for blackening mixture and sprinkle the Blackening Spice Mixture generously and evenly on both sides of the fillets. Place 1 or 2 fillets in skillet and cook uncovered over very high heat until the underside becomes deep brown, almost black (but not burned), about 2 minutes (the time may vary according to the fillet's thickness and the heat of the skillet). Turn the fish over and pour 1 teaspoon of butter on top of each. Cook until fish is done, about 2 minutes more. Repeat with remaining fillets. Serve each fillet while hot. To serve, place 1 fillet and a ramekin of butter on each plate.

Time 10m

Yield 6 servings

Number Of Ingredients 8

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
Lemon
Sea or kosher salt, optional

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.

Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

Tips:

  • To ensure the catfish fillets cook evenly, make sure they are all of uniform thickness. If needed, use a sharp knife to slice them to an even thickness.
  • For a crispy outer layer on the catfish, make sure to pat them dry before dredging them in the seasoned flour mixture.
  • When cooking the catfish, avoid overcrowding the skillet. Cook them in batches if necessary to prevent them from steaming rather than frying.
  • To prevent the sauce from burning, keep the heat on medium-low and stir frequently. If the sauce starts to thicken too much, add a little bit of water or broth to thin it out.
  • Serve the catfish and spinach immediately, garnished with fresh herbs or lemon wedges, for the best flavor and texture.

Conclusion:

This spinach catfish skillet is a quick, easy, and delicious seafood meal that is perfect for a busy weeknight dinner. The tender catfish fillets are coated in a seasoned flour mixture and pan-fried until golden brown, then smothered in a creamy spinach sauce. Serve it over rice, mashed potatoes, or your favorite pasta for a complete meal that the whole family will love.
