SPINACH STRAWBERRY SALAD WITH POPPY SEED DRESSING

Spinach Strawberry Salad with Poppy Seed Dressing image

Whip up a quick and fresh recipe for Spinach Strawberry Salad with Poppy Seed Dressing that's loaded with toasted nuts and tangy feta cheese.

Provided by Kelly Senyei

Number Of Ingredients 11

1/4 cup balsamic vinegar
1 Tablespoon honey
2 teaspoons poppy seeds
2 cloves garlic, minced
1/4 cup extra-virgin olive oil
Salt and pepper, to season
6 cups fresh spinach leaves
3 cups sliced strawberries
1/3 cup thinly sliced red onion
2/3 cup crumbled feta cheese (See Kelly's Notes)
2/3 cup slivered almonds, toasted (See Kelly's Notes)

Steps:

  • In a small bowl, whisk together the balsamic vinegar, honey, poppy seeds and minced garlic.
  • While whisking, stream in the olive oil and continue whisking until emulsified. (Alternately, combine all ingredients in a Mason jar, seal shut and shake vigorously until combined.) Taste and season the dressing with salt and pepper.
  • In a large bowl, combine the spinach, strawberries and red onion.
  • Add the dressing and toss to combine.
  • Top the salad with the crumbled feta and slivered almonds and serve.
  • I prefer to buy block-style feta and crumble it myself for the best consistency.
  • To toast the almonds, add them to a small sauté pan set over low heat. Cook, stirring frequently, until golden brown and fragrant. Toasting the nuts enhances their flavor and is a small step that contributes big taste to the overall salad.

This is a wonderful and refreshing salad that I got from Best of Bridge. I played around with it a bit and added a few other fresh fruits to it. This is yummy and great to offset a very rich main dish, such as my Death to Dieter's Lasagna.

Time 35m

Yield 6-8 serving(s)

  • Add second layer of spinach and top with remaining strawberries, oranges and pecans.

Tips:

  • For the best flavor, use fresh, ripe spinach and strawberries.
  • If you don't have any orange juice on hand, you can substitute lemon juice or white vinegar.
  • To make a vegan version of this salad, use maple syrup instead of honey in the dressing.
  • If you're short on time, you can use a store-bought poppy seed dressing instead of making your own.
  • This salad is also a great way to use up leftover cooked chicken or tofu.

Conclusion:

This spinach and strawberry salad with orange poppy seed dressing is a refreshing and delicious way to enjoy the flavors of spring. It's perfect for a light lunch or dinner, and it's also a great side dish for grilled chicken or fish. The combination of sweet strawberries, tangy orange, and crunchy poppy seeds is sure to please everyone at your table.
