Steps:
- Peel and cut mango into cubes, discard seed.
- Dice pineapple, saved juice.
- All other ingredients can be diced in the food processor. Careful not to over "pulse" to too fine a texture.
- Combine all ingredients and let sit for one hour or more before serving.
- Serve with tortilla chips.

- Sometimes the jalapenos are not very spicy, feel free to add hot sauce (Tobasco) to spice it up if desired.

- Combine paprika, onion and garlic powder, salt, oregano, thyme, black pepper, cayenne pepper and brown sugar in a small bowl.
- Cut salmon into 4 portions and brush with oil. Distribute the rub over the salmon generously coating all surfaces. Place salmon on a shallow baking pan with sides.

- Pulse for one second at at time.

- Preheat a grill to high heat.
- Mix together the brown sugar, chipotle, 1 teaspoon salt and 1/2 teaspoon black pepper in a small bowl. Rub into the steaks and set aside for 15 minutes.
- While the steak rests, crush the garlic clove, sprinkle with a pinch of salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with the cilantro, oil, habanero, mango, lime juice and scallions in a medium bowl. Season with salt and as much of the remaining habanero as desired for spiciness. Set aside.

SPICY SWEET PEACH SALSA
This is an awesome sweet hot salsa. It's a canning recipe not a fresh mix so with this one, you can have Peach salsa all year round :-) I've changed the recipe some deleting the celery as I don't like it (but to keep the necessary proportions of acids the same for safe canning, I subbed 1 3/4 extra cups green pepper and a 1/4 cup hot pepper. I used jalapeno but you could use your favorite) & adding two extra peaches; This salsa is wonderful w/ grilled chicken or fish or just as a go along to chips.Be prepared;with the jalapenos it DOES have a bite.

Steps:
- Pour boiling water over tomatoes; leave for one minute.
- Drain and cover with cold water.
- Peel, chop and measure to get 1 1/2 quarts (6 cups) Pour boiling water over peaches and let sit for two minutes.
- Drain water and immediately cover with cold water.
- Let sit for about 5 minutes then peel; the water baths should make the peels come off fairly easily.
- Put tomatoes and peaches into large heavy bottomed saucepan with all other ingredients.
- Boil slowly, stirring often, until thickened, about two hours.
- Remove spice bag and discard.
- Pour into sterilized pint or half pint jars, leaving 1/4 inch headspace.
- Process in boiling water bath for ten minutes; cool and store.

SWEET & SPICY MAHI-MAHI W/MANGO & BLACK BEAN SALSA

- Preheat your grill at medium high heat. Begin by making the marinade for the mahi-mahi. Combine in a small bowl the jerk seasoning, pineapple juice, cayenne and cumin. Pour over the mahi and make sure the steaks are evenly coated. Set aside and start making your salsa. In a medium bowl, take the mango and cut the fruit into a small dice. Add your strained and rinsed black beans to the bowl, along with jalapeno pepper, red onion, lime juice, and mint. Gently toss with a spoon to combine and flavor with salt and pepper. Set aside but keep the salsa at room temperature. Take your sweet potatoes and cut them into 1/2' rounds. Toss with olive oil, salt and pepper until lightly coated. When ready, place the sweet potatoes directly on the grill rack. Grill on one side for about 8-10 minutes. When you flip them over, add your fish steaks to the grill also. Cook steaks on one side for approximately 5-7 minutes. Flip them over (very carefully) and at that time your potatoes should be fork tender and ready to take off the heat. When fish is done, remove from grill. Serve each steak with 1/4 salsa and the grilled sweet potatoes.
