SPICY CHORIZO AND RED LENTIL SOUP WITH KALE

Spicy Chorizo and Red Lentil Soup with Kale image

This recipe, adapted from "The Alaska from Scratch" Cookbook," by Maya Wilson, transforms a brothy lentil soup into a spicy, warming main dish with the addition of fresh Mexican-style chorizo and chopped kale. This simple winter dinner also features carrots, which grow unusually sweet in Alaska's summer light and temperatures, and are a root-cellar staple. Sweet or spicy Italian sausage works well as a substitute for the chorizo.

Provided by Julia O'Malley

Categories     easy, soups and stews, main course

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 12

4 links fresh (uncured) Mexican-style chorizo, casings removed (1 pound)
2 tightly packed cups chopped kale
1 medium onion, chopped
2 medium carrots, peeled and sliced into 1/4-inch rounds
2 stalks celery, sliced 1/4-inch thick
2 garlic cloves, minced
1/2 teaspoon kosher salt, more to taste
1/4 teaspoon ground black pepper
2 quarts low-sodium chicken broth
1 14.5-ounce can diced tomatoes, with juice
1 cup red lentils
Crusty bread, for serving

Steps:

  • Set a large pot or Dutch oven over medium-high heat. Add the chorizo and cook, breaking the sausage into small pieces and stirring occasionally, until the chorizo is browned, about 8 minutes.
  • Add the kale, onion, carrots, celery and garlic and cook, stirring occasionally, until the vegetables are just starting to become tender, about 5 minutes. You should hear a steady sizzle from the pot; adjust the heat as needed. Season with salt and pepper.
  • Add the chicken broth, tomatoes and lentils, and bring to a boil. Reduce the heat to low, cover and gently simmer, stirring occasionally, for 20 minutes, or until the lentils are soft.
  • When ready to serve, taste and adjust the seasonings. Serve hot with crusty bread. Leftovers can be refrigerated in an airtight container for up to 7 days.

SPICY LENTIL SOUP

Spicy Lentil Soup image

Soup is one of my favorite comfort foods. Most soups take only a few minutes to prepare and then a little time to simmer. I often make and take homemade soup to friends who are in need of a bit of comforting. This one makes four small servings, and is perfect for vegetarians and spice lovers.

Provided by Leggy Peggy

Categories     < 60 Mins

Time 1h

Yield 4 serving(s)

Number Of Ingredients 15

1 cup red lentil, and water to cover (will be drained off)
1 -2 tablespoon olive oil
1 medium onion, chopped small
2 garlic cloves, crushed
1 teaspoon fresh ginger, grated
1 teaspoon turmeric
1/2-1 teaspoon ground cumin
1/8-1/4 teaspoon chili powder
1/2 cup zucchini, diced small
1/2 cup carrot, diced small
5 cups vegetable stock
salt and pepper, to taste
1 -2 ounce linguine, broken into 1-inch pieces
2 -4 tablespoons cilantro, chopped (optional)
cream, sour cream (optional) or neufchatel cheese (optional)

Steps:

  • Wash and pick over lentils. Cover with water and leave to soak for 15 minutes.
  • While lentils are soaking, prepare other ingredients for use.
  • When everything is ready, drain lentils and set aside.
  • Heat oil in a heavy saucepan. Sauté onion, garlic and ginger until onion is translucent.
  • Stir in turmeric, cumin and chili powder, and sauté for about 1 minute.
  • Add lentils, zucchini, carrot, vegetable stock, salt and pepper (if needed). Bring to a boil, then reduce heat and simmer for 20-30 minutes (until vegetables are almost tender). Spoon off scum as needed.

  • To serve, ladle into bowls and garnish with cilantro and a dollop of cream, sour cream or Neufchatel cheese.

Tips:

  • Use high-quality red lentils. Look for lentils that are whole and free of debris. Split lentils can also be used, but they will cook more quickly and may result in a less hearty soup.
  • Rinse the lentils before cooking. This will help to remove any dirt or debris and prevent the soup from becoming cloudy.
  • Use a good quality vegetable broth. This will add flavor and depth to the soup. If you don't have vegetable broth on hand, you can use water, but the soup will be less flavorful.
  • Don't overcook the lentils. Lentils should be cooked until they are tender but still hold their shape. Overcooked lentils will become mushy and the soup will be less appealing.
  • Add the spices and seasonings to taste. The amount of spices and seasonings you add will depend on your personal preference. Start with a small amount and add more to taste.
  • Serve the soup hot. Spicy sizzle red lentil soup is best served hot, with a side of crusty bread or crackers.

Conclusion:

Spicy sizzle red lentil soup is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. It is packed with flavor and nutrients, and it can be made in just 30 minutes. So next time you're looking for a quick and easy meal, give this soup a try. You won't be disappointed!
