Moroccan-Spiced Pork Chops and Fruity Couscous image

When I first found this recipe on the Weight Watchers website, I was amused by the idea of a Moroccan dish featuring pork as most of the natives I know from this country are Muslim. Though I will never serve this dish to them, I love the flavors of the marinade and have made some changes that make this truly delicious.

30-Minute Roasted Pork with Grapes and Couscous image

This simple weeknight dinner is a wonderful way to enjoy grapes in a different way. We love how juicy, sweet and tart they are when roasted.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

3 cups mixed black and green seedless grapes
10 to 12 fresh sage leaves
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pork tenderloin, trimmed and patted dry (about 1 1/4 pounds)
1/2 cup couscous
2 tablespoons walnuts, chopped

Steps:

  • Position 2 oven racks in the top and middle position, and preheat to 450 degrees F. Toss the grapes and sage leaves with 2 tablespoons of the oil, 1 teaspoon salt and a few grinds of pepper on a rimmed baking sheet. Bake on the top rack until the grapes have shriveled and softened and the skins have browned, 15 to 20 minutes. Pull out some of the sage leaves to use as garnish.
  • Meanwhile, season the pork all over with 1/2 teaspoon salt and a few grinds of pepper. Heat the remaining tablespoon of oil in a large ovenproof skillet over high heat. Add the pork and cook, turning as needed, until well-browned on all sides, about 5 minutes. Transfer the skillet to the middle rack of the oven, and roast the pork until an instant-read thermometer inserted in the center registers 145 degrees F, 11 to 12 minutes. Set aside to rest.
  • While the grapes and pork roast, put the couscous in a medium bowl. Add just enough hot water to cover the couscous, cover with plastic wrap and let sit until all the liquid is absorbed and the couscous is tender, about 5 minutes. Fluff with a fork.
  • Slice the pork. Put the couscous on a serving platter, and top with the pork and grapes. Sprinkle with the walnuts and reserved sage leaves.

RICE NOODLES WITH SPICY PORK AND HERBS

Rice Noodles With Spicy Pork and Herbs image

This cold rice-noodle dish, dressed in vinegar and chile oil and topped with spicy pork, herbs and peanuts, has roots in Yunnan, a southwestern Chinese province, where the garnish may vary according to the kitchen and season. The dish is quick to put together but can be served at a leisurely pace: Plate it, or set all of the components on the table and let people put together their own bowls the way they like, to their taste. The chef Simone Tong, who runs a Yunnan-inspired noodle restaurant in Manhattan, makes her version with ground pork, peanuts and a mix of fresh herbs but adds raw breakfast radishes and lacto-fermented pickles as well, for extra crunch and flavor. Feel free to do the same, or not; it's in the spirit of the dish to improvise with what's in season and what's on hand.

Provided by Tejal Rao

Time 20m

Yield Serves 4

Number Of Ingredients 16

1 pound thin, round rice noodles
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon black vinegar
1 tablespoon chile oil (like Lao Gan Ma brand)
1 teaspoon sugar
1 tablespoon canola or other neutral oil
1/2 pound ground pork
1 teaspoon salt
2 garlic cloves, sliced
1 1-inch piece ginger, chopped
2 scallions, light parts chopped, green parts reserved for garnish
1 tablespoon yacai (Sichuan preserved vegetables, optional)
Handful of herbs like mint, basil and cilantro leaves, washed
1/4 cup salted, roasted peanuts, chopped
4 breakfast radishes, sliced (optional)

Steps:

  • Bring a large pot of water to boil, and cook noodles according to instructions. Drain noodles while running under cold water, until they are cool to the touch. Set aside. Mix dressing by whisking rice vinegar, soy sauce, black vinegar, chile oil and sugar until sugar dissolves. Set aside.
  • Cook the pork topping: Heat oil in saucepan over medium heat, and add ground pork and salt. Pan-fry, breaking meat into small pieces with a wooden spoon, until no pink parts and no liquid remain in the pan, about 5 minutes. Add garlic, ginger and scallion whites, and stir occasionally until the raw smell has disappeared and the meat is starting to brown in places, about 5 minutes. Add the vegetables, if using, along with a tablespoon of water, and cook for 2 or 3 minutes more, or until mixture is darkened and thick. Set aside.
  • When you're ready to serve, divide cool, drained noodles into four individual bowls, and top each with a tablespoon of vinegar dressing followed by a pile of ground pork, herbs, peanuts and radishes, to taste. Serve with any remaining garnish, and additional chile oil and chile-oil solids, on the side.

Try this flavour-packed pork dish with couscous for dinner. It's healthy, full of nutrients and contains four of your 5-a-day

Provided by Sara Buenfeld

Categories     Dinner

Time 1h

Number Of Ingredients 17

30g fresh coriander
4 small garlic cloves, chopped
2 tsp sumac
1 tbsp olive oil
400g pork fillet
1½ tsp smoked paprika
drop of olive oil, for roasting
2 red onions, halved and sliced
1 aubergine, cut into 1cm cubes
200g wholemeal giant couscous
small bunch of spring onions (about 100g), sliced
½ large cucumber (about 320g), chopped
1 lemon, zested plus 2 tbsp juice
2 tbsp extra virgin olive oil
15g mint, leaves chopped
8 fresh apricots (about 320g)
25g toasted flaked almonds

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Put the coriander in a small bowl with the garlic, sumac, oil and 2 tbsp water, then blitz using a hand blender until smooth. Rub a quarter of it all over the pork, then put the pork on a large baking tray and sprinkle over the paprika.
  • For the couscous, rub a drop of oil over the red onions and aubergine, then scatter around the pork. (If your tray isn't large enough, use two.) Roast for 25 mins. Check the pork and if it isn't cooked but the vegetables are, take the vegetables out of the oven and cook the pork for another 10-15 mins until the juices run clear.
  • Meanwhile, cook the couscous following pack instructions, then drain and tip into a bowl with the remaining garlicky herb mixture. Add the spring onions, cucumber, lemon zest and juice, extra virgin olive oil and mint. Quarter and stone the apricots. If ripe, add the apricots to the salad bowl, but if a little firm, add them to the tray in the oven first to cook for 10 mins until softened.
  • Set the pork aside to rest. Add the roasted red onions, aubergine, apricots and almonds to the couscous and toss everything together. Slice the pork, serve half with half the couscous, and chill the rest for another day to eat cold. Will keep chilled for two to three days.

Tips:

  • Preparing the couscous: For perfect couscous, use a 1:1 ratio of couscous to liquid, whether water, broth, or a combination. Bring your liquid to a boil, remove it from the heat, and pour it over the couscous. Cover and let it sit for about 5 minutes, and then fluff it with a fork to achieve light and fluffy grains.
  • Choosing the right pork: Select a pork shoulder or pork butt roast for optimal flavor and tenderness. These cuts have a good amount of fat that will render during cooking and keep the pork moist and juicy.
  • Creating the perfect spice blend: Customize the spice blend to your taste preferences. Experiment with various chili powders, cumin, paprika, garlic powder, and cayenne pepper to achieve the desired level of heat and flavor.
  • Cooking the pork: Sear the pork shoulder or pork butt roast in a large pot or Dutch oven over medium-high heat until browned on all sides. This step adds flavor and color to the meat.
  • Adding the vegetables: Once the pork is browned, add chopped onions, carrots, celery, and garlic to the pot. Sauté until the vegetables are softened and fragrant.
  • Deglazing the pot: After removing the pork and vegetables from the pot, pour in white wine or chicken broth and scrape up any browned bits stuck to the bottom of the pot. This step adds depth of flavor to the sauce.
  • Simmering the pork: Return the pork and vegetables to the pot, add the spice blend, diced tomatoes, and chicken broth or water. Cover and simmer over low heat for several hours, or until the pork is fall-apart tender.
  • Serving the dish: Serve the spicy pork and couscous together. Garnish with chopped cilantro or parsley for added freshness and flavor.

Conclusion:

This recipe for spicy pork and couscous offers a delicious and satisfying meal that combines bold flavors and diverse textures. With simple ingredients and a straightforward cooking process, you can create a dish that will impress your family and friends.
