Number Of Ingredients 11

1/3 cup olive oil
1/2 onion, thinly sliced
4 large garlic cloves, chopped
2 teaspoons fennel seeds
1 teaspoon dried crushed red pepper
1/2 teaspoon salt
1 cup dry white wine
2 1/4-inch-thick lemon slices
1/2 cup chopped fresh parsley
2 1/2 pounds fresh mussels, scrubbed, debearded
1/2 cup chopped seeded tomatoes

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, garlic, fennel seeds, crushed red pepper and salt; sauté until onion is light brown, about 4 minutes. Add wine, lemon slices and 1/4 cup parsley; bring to boil. Add mussels. Boil broth in pot until reduced to 1 cup, about 3 minutes; season to taste with pepper. Pour broth over mussels. Sprinkle tomatoes and remaining parsley over.

Tips:

  • Fresh mussels are essential for this recipe. Look for mussels that are tightly closed and have a briny smell.
  • Be sure to scrub the mussels thoroughly before cooking to remove any dirt or grit.
  • If you don't have white wine, you can substitute dry vermouth or even chicken broth.
  • Use a large pot or Dutch oven to cook the mussels so that they have plenty of room to open up.
  • Don't overcrowd the pot with mussels. If you have too many mussels, they will not cook evenly.
  • Cook the mussels over medium heat. If the heat is too high, the mussels will toughen.
  • Serve the mussels immediately with crusty bread for dipping.

Conclusion:

Spicy Mussels with White Wine and Garlic Sauce is a quick and easy seafood dish that is perfect for a weeknight meal. The mussels are cooked in a flavorful sauce made with white wine, garlic, and chili peppers. Serve the mussels with crusty bread for dipping and enjoy a delicious and satisfying meal.
