SPICY MEXICAN CORNBREAD

Spicy Mexican Cornbread image

This is a recipe my mother gave me. It is so simple, moist, and delicious. At least we like it. I have no idea where she came across it, I think a friend gave it to her. You can make this as spicy as you want, add more or less jalapeno peppers to the recipe.

SPICY MEXICAN CORNBREAD

I just threw a few things together tonight, wanting a cornbread mixture that was different than any other night. This went over very well. You can adjust the heat level to your liking. I served this w/ turnip greens and a bit of veal. Yum!

Time 30m

Number Of Ingredients 6

3 box jiffy cornbread mix, or your favorite
1/2 c egg substitute, or 2 large eggs
2/3 c evaporated milk (or less, depending)
1 can(s) glory southern style skillet corn w/ onion and bacon (slightly drained)
2 Tbsp dried jalapeno (found @ specialty stores), or 1/2-3/4c jalapeno (pickled, roughly chopped)
2 c sargento artisan mexican cheese blend, or your favorite

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. In a med.-large bowl, mix cornbread, egg, milk, corn, jalapeno, and cheese.
  • 3. Pour evenly into greased muffin tins. Bake 15-20 minutes. If making a loaf, I would suggest a larger pan, as the cook time can be extensive.

Tips:

  • Choose the Right Cornmeal: Use a fine or medium-grain cornmeal for a smooth texture. If you prefer a more rustic texture, use a coarse-grain cornmeal.
  • Spice It Up: Adjust the amount of chili powder and cumin to your desired spice level. Add a pinch of cayenne pepper for an extra kick.
  • Don't Overmix: Overmixing the batter will result in a tough cornbread. Mix just until the ingredients are combined.
  • Use Fresh Corn: If you have fresh corn on hand, you can use it to make creamed corn to add to the batter for a sweeter, more flavorful cornbread.
  • Bake in a Hot Oven: Preheat the oven to the highest temperature possible before baking the cornbread. This will help it rise and develop a crispy crust.

Conclusion:

Spicy Mexican cornbread is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. With its slightly spicy flavor and moist, tender texture, it's sure to be a hit with everyone at the table. Whether you're serving it with chili, soup, or just a pat of butter, this cornbread is sure to satisfy. So next time you're looking for a quick and easy side dish, give this recipe a try!
