Korean Zucchini Side Dish image

Provided by Seonkyoung Longest

Time 5m

Yield 4

Number Of Ingredients 10

4 medium-sized zucchinis
1/2 small onion, thinly sliced
5 cloves garlic, chopped
2 green onions, sliced
2 heaping tbsp Saewoojeot, Korean salted & fermented shrimp (you can substitute to fish sauce or soy sauce)
1 tbsp maple syrup
1/2 tbsp gochugaru, optional
2 tsp cooking oil
sesame seeds for garnish
sesame oil for garnish

Steps:

  • Cut zucchinis in half lengthwise and slice into a half-moon shape.
  • Place all ingredients in a wok or large skillet except sesame seeds and sesame oil.
  • Over high heat, stir fry ingredients for 5 minutes, or until zucchini is cooked but still has bite. It will have some liquid on the bottom, that's totally fine but don't overcook them, they will become too mushy.
  • Place on a serving plate, and garnish with sesame seeds and sesame oil. Enjoy with warm cooked rice and with other side dishes or make bibimbap by just simply putting the zucchini on top of the rice and adding a fried egg! Enjoy!

SPICY ZUCCHINI

Spicy Zucchini image

This was so good last night, I don't want to forget what I did! This was a great side dish for cheese enchiladas. Adjust the seasonings according to your tastes and the age of your kids. I used the lower end for my 6yo (who ate it without protest) and 20mo (who was not so fond of it). If I were to cook this for just the adults at my house, I would use the upper end. I used really small zucchini for this, less than an inch in diameter and about 5-6 inches long.

Time 10m

Yield 4 serving(s)

Number Of Ingredients 6

1 tablespoon olive oil
1/4 onion, thinly sliced
4 small zucchini
1 -3 teaspoon garlic powder
1 -3 teaspoon chili powder
1 teaspoon salt

Steps:

  • Place oil in a large, heavy non-stick skillet and begin heating over medium high heat.
  • Meanwhile, slice onion and cut zucchini into 1/4" rounds.
  • Once oil is nice and hot, saute onion until it is starting to carmelize (about 2 minutes).
  • Add zucchini and seasonings. Turn heat down slightly (to medium), and cook for about 5 minutes, stirring occasionally.
  • Zucchini should be yellow with some brown spots, slightly transparent looking and soft without being mushy. Onions should be thoroughly carmelized and yummy. :).

Tips:

  • Choose the right zucchini: Select smaller and firmer zucchini for better texture and flavor.
  • Slice zucchini evenly: Uniformly sliced zucchini will cook evenly.
  • Marinate the zucchini: Marinating the zucchini in the spicy sauce before cooking enhances the flavor.
  • Cook over high heat: High heat helps to caramelize the zucchini and develop a slightly charred flavor.
  • Don't overcrowd the pan: Avoid overcrowding the pan with zucchini slices to ensure even cooking.
  • Serve hot: Spicy Korean zucchini is best served hot, as a side dish or as part of a main meal.

Conclusion:

Spicy Korean zucchini is a quick and easy dish that packs a flavorful punch. With its vibrant colors and spicy-sweet flavor, it's sure to be a hit at any gathering. Whether you're looking for a side dish, appetizer, or a vegetarian main course, this recipe delivers. So, gather your ingredients, follow the simple steps, and enjoy this delicious Korean-inspired dish!
