2 tbsp Lemon juice ( (helps in fighting flu and cold))
1 tbsp ginger (chopped finely (optional))
1 tbsp garlic (chopped finely)
1 tsp ghee (or oil or butter)
1 small bay leaf
4 pepper corn
2 inch cinnamon piece

Steps:

  • Add chicken, potatoes, mixed vegetables, and 3 cup water to a cooker or pot.
  • Tear the bay leaf to pieces and break the cinnamon. Add them along with pepper corn.

2 medium onions, quartered
6 garlic cloves, smashed
1/2 cup coarsely chopped fresh ginger, plus 3 thin slices
2 teaspoons vegetable oil
1 1/4 teaspoons whole coriander seeds
1 teaspoon whole cumin seeds
1 teaspoon whole mustard seeds (yellow or brown)
6 canned whole peeled tomatoes, finely chopped (1 cup)
1 serrano chile, thinly sliced
Garnish: sliced scallions and orange wedges

Steps:

  • Bring chicken, water, and 1 tablespoon salt to a boil in a large stockpot. Skim foam. Add onions, garlic, and chopped ginger. Reduce heat. Simmer, partially covered, for 30 minutes.

1-inch piece ginger, grated
8 cardamom pods, cracked with the back of a chef's knife
1 tablespoon curry powder
1/2 teaspoon dried red chili flakes
2 teaspoons ground coriander
1 tablespoon sweet paprika
2 tablespoons honey
1 teaspoon salt
20 grinds black pepper
3 tablespoons vegetable oil
1 medium onion, cut into medium dice
3 tablespoons tomato paste
2 cups half-and-half
Basmati rice, for serving
