We are big couscous fans in my house and this recipe that my husband found from Ainsley Harriot is really tasty. Great as a snack on it's own or as an accompaniment to roasted veggies or grilled meats and fish.

Number Of Ingredients 12

2 tablespoons olive oil
1 garlic clove, finely chopped
1 tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
350 ml chicken stock or 350 ml vegetable stock
good pinch saffron strand
6 spring onions, trimmed and thinly sliced
225 g couscous
1 lemon, juice and zest of
2 red chili, seeded and finely chopped
50 g pine nuts, toasted

Steps:

  • Heat 1 tbsp of the oil in large pan. add the cumin,garlic,coriander and paprika and fry over a gentle heat for 1 min,stirring.
  • Add the stock and saffron and bring to the boil. Add the spring onion and then pour in the couscous in a steady stream and give it a quick stir.
  • Cover the pan with a tight fitting lid, remove from the heat and set aside for 5 minutes, to allow the grains to swell and absorb the stock.
  • If you are serving this warm, stir in the rest of the oil and the remaining ingredients now. Otherwise allow the couscous to cool and chill in the fridge for 1 hour before adding the other ingredients for a yummy cold couscous salad.

2 tablespoons canola oil
2 teaspoons minced garlic

Steps:

1 clove garlic
8 ounces pork tenderloin
No-salt added beef stock or broth
1 cup whole-wheat couscous
1 teaspoon olive oil
4 ripe plum tomatoes
8 Italian, French or Greek black olives
2 scallions
1 tablespoon lemon juice
A few sprigs cilantro to yield 1 tablespoon chopped
A sprig fresh mint to yield 1 teaspoon chopped
Salt and freshly ground black pepper to taste

Steps:

  • Combine cumin and ginger. Crush garlic, and add to spices. Wash and dry pork, and cut into 3/4-inch cubes. Roll the pork in the spice mixture, and set aside.
  • Following the package directions, bring the beef stock to a boil. Add the couscous, cover and remove from heat. Allow to sit for 5 minutes, until the couscous has absorbed the liquid.

  • Meanwhile, wash, trim and coarsely chop tomatoes. Pit and chop olives. Wash, trim and cut the scallions into thin rounds. Wash and chop cilantro and mint. 2 c lentils, cooked
2 T lime juice
1 T Nutrific Calypso Spice Blend
1 medium onion, chopped
For each T of Calypso Spice Blend, you may substitute: 1.5 t ground chilies, 3/4 t cumin, 1/2 t black pepper, and 1/4 t garlic powder.

Steps:

  • 1. Heat oil in 5-6 qt pan over medium heat. Add the onion, garlic, and jalapeno chilies. Cook, stirring occasionally until the onion is golden (about 15 min). 2.
