BLACK BEAN AND CORN RELISH

Black Bean and Corn Relish image

Made this as part of the "pickies" I had out for Mother's Day this year, mostly from ingredients I had on hand. This is delicious with tortilla or pita chips. I have also been taking the leftover with me to work, served over a bed of greens. All spice measurements are approx. I did them all "to taste".

Tips:

  • For the best flavor, use fresh corn kernels. If you don't have fresh corn, you can use frozen or canned corn, but be sure to drain it well before using.
  • Use a variety of peppers to add heat to the relish. Jalapeños, serranos, and habaneros are all good choices. If you don't like spicy food, you can omit the peppers or use a milder variety, such as bell peppers.
  • Be sure to chop the vegetables finely so that they will blend well in the relish.
  • If you want a chunky relish, don't puree the vegetables. Instead, chop them into small pieces.
  • Taste the relish before serving and adjust the seasonings as needed.}
