Steps:
- In a heavy pot on high heat, add the oil and 1 kernel of popcorn; then cover. When the kernel pops, add the rest of the kernels and cover. Pop while gently sliding and shaking the pot back and forth to move kernels around inside. Cook until the popping slows dramatically to 1 or 2 pops per second. Remove the popcorn from the pot and pour on top of a wire rack in a parchment-lined baking sheet. Lightly salt. Using the same pot, add the butter, maple syrup, cayenne, cumin, cinnamon and chili powder and stir to combine. Cook over medium-high heat until it bubbles. Gently pour over the popcorn, allow to cool slightly, then tranfer to a bowl, toss with tongs, and serve immediately.

CINNAMON-SUGAR POPCORN
I first tried this when I was visiting my sister in West Virginia. After trying it, I loved it, however I neglected to ask her for the recipe. 10 years later, I have it, and I still love it! The kids can help make it if you use an air popper (which I did to reduce fat and calories...there's enough in the butter!) I used my deep dish lasagna pan to cook it in the oven. You can use a roasting pan or any other large, deep dish pan. It makes a lot, so either invite your friends or store it in an airtight container for later.

Tips:
- Choose the right popcorn kernels. You want to use popcorn kernels that are specifically designed for popping, such as yellow or white popcorn kernels. Avoid using field corn or dent corn, as these types of corn do not pop well.
- Use the right amount of oil. Too much oil can make your popcorn greasy, while too little oil can prevent the kernels from popping properly. A good rule of thumb is to use 1 tablespoon of oil for every 1/2 cup of popcorn kernels.
- Heat the oil over medium-high heat. This will help the popcorn kernels to pop quickly and evenly.
- Add the popcorn kernels to the pot. Make sure the kernels are evenly distributed in the pot so that they all have a chance to pop.
- Cover the pot and shake it frequently. This will help to distribute the heat evenly and prevent the popcorn from burning.
- Listen for the popping sounds to slow down. Once the popping sounds start to slow down, remove the pot from the heat and transfer the popcorn to a bowl.
- Season the popcorn to taste. You can add salt, pepper, butter, or other seasonings to your popcorn to taste.
Conclusion:
Spicy cinnamon popcorn is a delicious and easy-to-make snack that is perfect for movie nights, parties, or just a quick snack. With just a few simple ingredients, you can create a sweet and spicy popcorn that is sure to please everyone. So next time you're looking for a tasty snack, give spicy cinnamon popcorn a try.
