Categories     main-dish

Time 1h50m

Yield 8 servings

Number Of Ingredients 12

1 onion, chopped
1 bell pepper, cored, seeded and chopped
2 cloves garlic, very finely chopped
6 large eggs
21/2 cups milk
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh flat-leaf parsley
12 ounces white bread, cubed (about 1/2 loaf)
1/2 cup grated Cheddar cheese (about 2 ounces)
Coarse salt and freshly ground black pepper
2 teaspoons canola oil, plus more for the dish
1/2 pound pork or turkey country sausage, casings removed

Steps:

  • In a large nonstick skillet, heat the oil over medium heat. Add the sausage and cook, stirring and breaking it up into smaller pieces, until it begins to brown, 3 to 5 minutes. Add the onion and bell pepper and cook until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Remove from the heat to cool slightly.
  • Meanwhile, whisk together the eggs, milk, sage and parsley in a large bowl. Add the cubed bread, sausage-vegetable mixture and 1/4 cup of the cheese. Season with salt and pepper. Stir to combine. Cover and refrigerate for at least 30 minutes or overnight.
  • Preheat the oven to 350 degrees F. Brush a medium casserole dish with oil. Pour the chilled bread mixture into the prepared casserole dish. Sprinkle with the remaining 1/4 cup of cheese. Let sit at room temperature for 20 minutes.
  • Transfer the casserole to the oven and bake until puffed and golden brown, about 30 minutes. (If the top of the casserole starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.

1 sweet onion, chopped
7 eggs
1 (8 ounce) package Cheddar cheese, grated, divided
½ cup milk
salt and ground black pepper to taste

Steps:

Spicy Cheesy Sausage Breakfast Casserole image

Good for holidays, Mother's Day, and lazy Sunday mornings. :) Make it the night before and stick in the fridge, then just pop into the oven the next morning.

Provided by Julesong

Categories     Breakfast

Time 1h20m

Yield 8-10 serving(s)

Number Of Ingredients 17

8 slices white bread, crusts removed and cut into cubes
1 lb spicy pork sausage, crumbled and cooked (Italian, bulk, or Jimmy Dean)
1 cup sliced mushrooms
1/4 cup finely chopped onion
2 cloves garlic, minced
1 (4 ounce) can mild green chilies, drained
1 1/2 cups grated sharp cheddar cheese
10 large eggs
2 cups milk
2 tablespoons chopped sun-dried tomatoes
1 tablespoon minced fresh basil
1/4 teaspoon ground sage
2 teaspoons dry mustard
1 teaspoon salt
pepper, to taste (anywhere between 3 dashes to 1/4 teaspoon)
2 dashes Tabasco sauce, to taste
pepper

Steps:

  • Cook the sausage until browned well, crumble; set aside.
  • In the same pan, sauté the mushrooms, onion, garlic, and green chiles.
  • Combine the sausage with the mushroom mixture; set aside and let cool.
  • Grease a 9x13-inch glass baking dish and fill the bottom with the prepared bread cubes; top with sausage mixture then the cheese.
  • Beat together the eggs, milk, sundried tomatoes, basil, sage, dry mustard, salt, pepper, and Tabasco; pour over sausage and cheese in the baking pan.
  • (This dish can be prepared a day ahead- at this point you'd cover it with plastic wrap and put it in the refrigerator.) In the morning, remove the casserole from the refrigerator and set it out on the counter for 30 minutes.
  • Preheat oven to 350 degrees F.
  • Uncover and bake casserole until it's golden and puffy and the center is set, about 50 to 60 minutes.
  • Cut into squares and serve.
  • If you want it especially spicy, chop up a jalapeno and sauté it along with the onion and mushrooms; you can also substitute O'Brien potatoes for the bread; you can even substitute vegetarian sausage for the meat!

Tips:

  • Use a non-stick skillet to easily brown the sausage without sticking.
  • To make the casserole ahead of time, assemble it the night before and refrigerate. Then, bake it in the morning.
  • If you like a more cheesy casserole, add an extra cup of shredded cheese.
  • Feel free to add other vegetables to the casserole, such as diced bell peppers, onions, or spinach.
  • Serve the casserole with your favorite toppings, such as sour cream, salsa, or guacamole.

Conclusion:

This spicy cheesy sausage breakfast casserole is a delicious and easy-to-make dish that is perfect for a weekend brunch or a holiday breakfast. It is packed with flavor from the sausage, cheese, and spices, and it is sure to be a hit with everyone who tries it. So next time you are looking for a satisfying and flavorful breakfast casserole, give this recipe a try.
