1 tablespoon honey, mildly flavoured
1/4 cup red wine vinegar or 1/4 cup cider vinegar
1 teaspoon mustard seeds

1/4 teaspoon ground cumin
3/4 cup water
3/4 teaspoon salt

  • Place all the ingredients into a medium sized saucepan and, over a high heat, stir until the honey dissolves.

4 pounds fresh beets
1 cup sugar
1 cup cider vinegar
2 tablespoons grated peeled horseradish
2 teaspoons canning salt
1/2 teaspoon cayenne pepper
1/4 teaspoon pepper
Optional: Sliced baguette and grated lemon zest

Steps:

  • Scrub beets and trim tops to 1 in. Place in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 45-60 minutes or until tender. Remove from water; cool. Peel and shred beets., In a Dutch oven, combine sugar and vinegar; cook and stir over medium heat until sugar is dissolved. Stir in shredded beets, horseradish, salt, cayenne and pepper; bring to a boil., Ladle hot mixture into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot relish. Wipe rims. 1 pound medium-hot red chile peppers, such as Fresnos or red jalapenos
2 small red or orange bell peppers - stemmed, seeded, ribs removed
½ large onion, peeled and quartered
1 ¼ cups white sugar
¾ cup apple cider vinegar
1 ½ teaspoons pickling salt

Steps:

  • Wearing rubber or latex gloves, trim tops off chiles. Working in batches, pulse chiles, bell peppers, and onion in a food processor until chopped into fine bits, about 1 minute per batch. Transfer to a nonreactive 3-quart pot.
  • Stir sugar, vinegar, and salt into chile mixture and bring to a boil over high heat. Reduce heat to medium and simmer, stirring more frequently toward end of cooking to prevent scorching, until thickened, 20 to 30 minutes.

1 lb beet, trimmed
1/4 cup prepared horseradish
1 tablespoon cider vinegar
1 tablespoon fresh dill, chopped (I used dried dill ( didn't measure but about 1 teaspoon)
1/4 teaspoon salt

Steps:

  • Bring beet and enough water to cover beet to a boil in a saucepan. Reduce heat and simmer for 45-50 minutes (I boiled mine for closer to 30 minutes). Drain and let cool and then slip skins off of beets and chop in big pieces -- remember to let the food processor do the work!
  • Put beets with the remainder of the ingredients in a food processor and pulse until finely chopped.
  • Cover and refrigerate for up to one week.
