SPICY ASIAN TUNA SALAD

Spicy Asian Tuna Salad image

Do yourself a favor and try this fabulous variation on traditional tuna salad. It's good for everyday use on top of a salad with an asian vinagrette and can also be served with crackers at a dinner party. If you like a little crunch in your tuna salad feel free to substitute red onion for the green onion or add some chopped up celery. I created this recipe on a whim for use in my sushi rolls and have it posted under "Spicy Tuna Salad Sushi Roll" with a lot of detailed instructions on how to prepare the rolls.

1/2 teaspoon ginger powder (if using fresh ginger use 1/4 tsp)
1/2 teaspoon sesame oil

SPICY ASIAN SALAD

SPICY ASIAN SALAD image

Categories     Leafy Green     Nut     Side     No-Cook     Vegetarian

Yield 6 side dishes or 2 main course salads

Number Of Ingredients 15

Dressing
2/3 cup rice vinegar
1/4 cup sugar
1 Tbs. salt
1 tsp. to 1 Tbs. chili garlic sauce, depending on desired hotness
2 Tbs. vegetable oil
Salad
2 cucumbers, (peeled, halved lengthwise, seeds scooped out, and chopped)
2 cups Napa or other oriental cabbage, thinly sliced or shredded
1 medium-size red onion, finely chopped
1/2 cup chopped cilantro
1/4 cup chopped parsley (curly or flat-leaf)
1/4 cup chopped mint leaves (optional)
Garnish
3/4 cup or more dry roasted UNSALTED peanuts, lightly crushed (I use the ones I buy at the grocery in a jar)

Steps:

  • Dressing-- Mix all ingredients together and taste to adjust seasoning. The goal is to have a balance of sweet, salty, and sour (vinegar), plus some hot (chile garlic sauce) to taste. Finish--Toss salad ingredients together and then toss with dressing, starting with about 1/2 the dressing. Add more dressing as desired. Just before serving sprinkle peanuts on top.

Tips:

  • Prep the vegetables and tofu ahead of time: This will save you time when you're ready to assemble the salad.
  • Use a sharp knife to slice the vegetables: This will help them stay crisp and prevent them from getting bruised.
  • Don't overcook the tofu: Tofu is best when it's cooked until it's just firm to the touch. If you overcook it, it will become tough and chewy.
  • Use a light hand with the dressing: You don't want to overpower the flavors of the vegetables and tofu. Start with a small amount of dressing and add more to taste.
  • Serve the salad immediately: This salad is best when it's fresh. If you make it ahead of time, store it in the refrigerator for up to 2 hours before serving.

Conclusion:

This spicy Asian salad is a healthy and flavorful dish that's perfect for a light lunch or dinner. It's packed with fresh vegetables, tofu, and a tangy dressing. The salad is also easy to make and can be customized to your liking. So next time you're looking for a quick and easy meal, give this spicy Asian salad a try. You won't be disappointed!
