55 oz can of Bush's original baked beans
1 large apple (I used Fuji), diced or cut into chunks
1/2 c natural applesauce
fresh grated nutmeg, to taste
2 Tbsp Dijon mustard
1 pinch small pinch, cayenne pepper
2-4 Tbsp brown sugar, light
1 lb hot ground sausage (I used venison sausage)
1 small onion, diced

Steps:

  • 1. Brown the sausage with the onions. Drain off grease.
  • 2. Place the applesauce, apple chunks, mustard, brown sugar, and cayenne pepper into a bowl. Grate in fresh nutmeg (it only takes a little nutmeg too much will overpower the other flavors). Stir together until mixed well.
  • 3. In a large bowl, mix the spicy apple mixture into the beans. Fold in sausage and onions.
  • 4. Bake in a glass or stoneware dish at 350 degrees for 45 minutes.

1 cup spicy barbecue sauce

2 garlic cloves, peeled and finely chopped
2 tablespoons freshly grated ginger
1 teaspoon cayenne pepper
2 cups carrots, peeled and finely sliced
2 cups apples, peeled, cored and sliced
1/2 cup tomato paste
1/2 cup Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup molasses
2 tablespoons balsamic vinegar
1 (15-ounce) can tomato sauce plus 1 can water

1 whole dried chile pepper
1 bay leaf
2 pounds dried pinto beans, cooked according to package directions

1 cup dried kidney beans
1/2 cup dried cannellini beans
1/2 cup dried Great Northern or navy beans
2 sprigs fresh thyme
1 tablespoon cumin seeds
1 tablespoon olive oil
1 large onion, chopped
1 carrot, chopped
1/2 pound smoked slab bacon, in 1/2-by-1-inch nuggets
1 jalapeno pepper, seeded and chopped
2 cloves garlic, chopped
1/2 cup crushed canned tomatoes
4 ripe plum tomatoes, diced
1/4 cup maple syrup
1/4 cup light brown sugar
1 bay leaf
Grated rind of 1 orange
1/2 tablespoon crushed black peppercorns
1/3 cup chopped fresh cilantro leaves
1/4 cup cider vinegar, or more, to taste
Salt to taste

Steps:

  • Place all beans in a bowl, cover with water to a depth of 2 inches, add thyme and soak at least 4 hours.
  • Heat a heavy 3-quart casserole. Add cumin seeds, and cook, stirring, until they dance around and smell toasty. Remove them.
  • Add the oil, onion, carrot and bacon to casserole, and saute over medium heat 10 minutes, until the bacon is golden. Stir in the jalapeno, garlic and toasted cumin seeds.

  • Add vinegar and salt to taste. Return to the oven 2 1/2 hours longer, until the liquid has been absorbed but the beans are still moist. Adjust seasonings, adding more vinegar and salt if needed. Sprinkle with remaining cilantro, and serve.
