1-1/2 teaspoons garlic powder
1-1/2 teaspoons ground mustard

1 cup brown sugar
1 cup sea salt
1 cup frozen apple juice concentrate, thawed
1 1/2 teaspoons whole black peppercorns
2 fresh thyme sprigs
4 double-cut bone-in loin pork chops, 1 pound each
Sea salt and freshly ground black pepper
Extra-virgin olive oil
2 tablespoons unsalted butter
3 Granny Smith apples, peeled, cored, and sliced in 1/2-inch-thick wedges
Leaves from 2 fresh thyme sprigs
1/4 cup raisins
3/4 cup frozen apple juice concentrate, thawed
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Pinch dry mustard
Sea salt and freshly ground black pepper
1/2 lemon

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl combine the water, brown sugar, sea salt, apple juice concentrate, peppercorns, and thyme. Give it a good stir to dissolve the sugar and salt. Transfer the mixture to an extra-large re-sealable plastic bag. Submerge the pork chops in the brine, seal up the bag, and put it in the refrigerator for 2 hours to tenderize the meat. Do not brine longer than that or the meat will break down too much and get mushy.
  • Remove the pork chops from the brine and pat them dry with paper towels. Sprinkle both sides of the meat with salt and pepper. Put a heavy skillet over medium-high heat. Add a 3-count drizzle of olive oil and get it hot. Lay 2 pork chops in the pan (most likely only 2 of these massive pork chops will fit comfortably) and brown 4 minutes per side. Remove the pork chops to a large baking pan; brown the remaining 2 chops and add them to the others in the pan. Put the baking pan in the oven and roast the chops for 30 minutes. The pork is done when the center is still rosy and the internal temperature reads 140 to 145 degrees F when tested with an instant-read thermometer.
  • While the chops cook, melt the butter in a clean skillet over medium-low heat. Add the apples and thyme and coat in the butter; cook and stir for 8 minutes to give them some color. Toss in the raisins and add the apple juice, stirring to scrape up the brown bits. Stir in the brown sugar, cinnamon, cloves, and dry mustard; season with salt and pepper. Squeeze in the juice from the lemon to wake up the flavor and simmer for 10 minutes or until the apples break down and soften. Spoon the spiced apples over the pork chops.

This is based on Joan MacKinnon's really great 'Spiced Pork Chop' recipe, modified based on numerous reviews from others and trial and error. This is my current favorite version for empty nesters (i.e. two servings). The gravy is optional but very tasty. It is important to use the size pan indicated so that wine sauce can spread out and evolve. I find the gravy is better if not too thick. Also use milk if you want a thinner gravy.

  • Stir sherry, water, and brown sugar together until sugar dissolves; pour over pork chops.

1 (11 ounce) can mandarin oranges, drained

  • In a large skillet, heat oil on medium heat and brown pork chops briefly on both sides (maye 1-2 minutes per side); Do not overcook at this point or they will get tough!

My friend gave me this simple recipe when I was expecting our first baby. It's a gret fall/winter meal. We also use it for OAMC/freezer meals and it works great (freeze meat/veggies separate from sauce and combine when thawed). Also try with 2 1/4 lbs turkey thighs (skin removed)instead of pork.

1 lb cooking apple (half green, half red, cored and cut into quarters)
1 lb acorn squash (seeded and cut into 8 wedges)

3 teaspoons ground cardamom
3 teaspoons ground coriander
1/2 tablespoon ground red pepper
3 tablespoons lemon peel
1/2 tablespoon kosher salt

6 pork loin chops, 1 1/2-inch thick
3 tablespoons roasted garlic oil or 3 tablespoons extra virgin olive oil

Steps:

  • Preheat oven to 350.
  • In a large Ziplock bag combine cumin, cardamom, coriander, red pepper, lemon peel, salt, and pepper.
  • Place pork chops in bag one at a time and rub spices evenly over both sides.
  • Heat a skillet to medium-high heat.
  • Add the oil and sear the chops on both sides.
  • After they brown, put them on a half-sheet pan and finish them in the oven to desired tenderness. For thick chops, plan on 45 min to 1 hour. Cover with foil if tops seem to be getting too done.

1-1/2 cups chopped fresh rhubarb (1/2-inch pieces)
1/2 cup chicken broth
2 tablespoons sugar
1 tablespoon honey
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Red food coloring, optional
4 bone-in pork loin chops (3/4 inch thick)
1 tablespoon vegetable oil
Salt and pepper to taste

Steps:

  • In a saucepan, combine the rhubarb, broth, sugar and honey; cook over medium heat until rhubarb is tender. Stir in the cinnamon, ginger, nutmeg and food coloring if desired., In a large skillet, brown pork chops in oil. Sprinkle with salt and pepper. Pour rhubarb mixture over the chops. Cover and simmer for 35-40 minutes or until meat juices run clear, turning once.

1 c corn meal
1 c flour
3 large eggs
1or 2 dash(es) hot sauce
2 Tbsp chili powder
1 tsp cayenne pepper
3 to 6 pork chops
salt and pepper

Steps:

  • 1. preheat oven to 450 degrees
  • 2. place flour in flat bottom bowl
  • 3. place eggs in another bowl add hot sauce and beat well
  • 4. in another bowl place corn meal chilli powder and cayanne pepper. mix well
  • 5. dredge chops in flour
  • 6. dip in egg mixture
  • 7. coat in corn meal mixture
  • 8. place on a baking sheet coverd in aluminum foil
  • 9. drizzle olive oil lightly over chops
  • 10. place in pre heated oven and bake 10 to 15 mins til a crusty gloden brown
  • 11. don't over cook. Pork dries out quickly when over cooked.
