Categories     Other Breakfast

Time 35m

Number Of Ingredients 14

1/3 c butter, room temp
1 c sugar
2 eggs
1/3 c water
1/4 tsp almond extract
1 c fresh peaches, peeled and chopped
1 2/3 c flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
2 Tbsp brown sugar
2 Tbsp almonds or walnuts (optional)

Steps:

  • 1. Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy, ~1 minute. Beat in eggs, water, and almond extract. Stir in peaches.
  • 2. Combine flour, baking powder, salt, baking powder, cinnamon, and nutmeg. Add to wet mix. Beat to thoroughly combine.
  • 3. Pour roughly 2/3 full into paper lined standard muffin cups. Divide and top with brown sugar (and nuts if you are using them).
  • 4. Bake 18 minutes or until just golden brown and slightly springy to the touch. Serve warm or cool on wire racks and serve room temp.
  • 5. Store covered and enjoy!!

Tips:

  • Use fresh, ripe peaches: This will ensure the muffins are bursting with flavor. If you don't have fresh peaches, you can use frozen or canned peaches, but be sure to thaw them and drain them well before using.
  • Don't overmix the batter: Overmixing will result in tough muffins. Mix just until the ingredients are combined.
  • Fill the muffin cups almost to the top: This will help the muffins rise evenly.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that the muffins are cooked through.
  • Let the muffins cool for a few minutes before serving: This will help them hold their shape.

Conclusion:

These spiced peach muffins are a delicious and easy-to-make breakfast or snack. They're perfect for using up fresh peaches in the summer, and they're also a great way to get your kids to eat their fruit.
