Yield 4

Number Of Ingredients 10

2 tablespoons butter
1 medium onion, chopped
1 pound parsnips, peeled and cubed
1 clove garlic, finely chopped
2 teaspoons curry powder
1 cube chicken bouillon
3 ¼ cups boiling water
½ cup heavy cream
salt and pepper to taste
1 pinch red pepper flakes or paprika for garnish

Steps:

  • Melt the butter in a large saucepan over medium heat. Fry the onion in butter until soft, about 5 minutes. Add the parsnips, garlic and curry powder, and fry for a couple of minutes to release the flavors. Mix the bouillon cube into the boiling water, and pour into the saucepan. Stir to remove any bits of vegetable from the bottom of the pot. Simmer for 15 minutes or until parsnips are soft and easy to break with a wooden spoon.
  • Remove from the heat, and blend with a hand mixer or immersion blender. Stir in the cream, and heat through. Do not boil. Season with salt and pepper to taste, and garnish with red pepper flakes or paprika.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

olive oil
1 parsnip, peeled, chopped
1 small onion, chopped
1 garlic clove, finely chopped
1/2 teaspoon ground nutmeg
1 teaspoon coriander seed
1/2 teaspoon ground fennel
1/4 teaspoon ground ginger
1/4 cup white wine
1 1/2 cups chicken stock
2 tablespoons sour cream
chopped flat leaf parsley, to serve

Steps:

  • Heat a little oil in a saucepan add onions and garlic, Heat through until onions are tender and transparent in colour. Remove onions/garlic from the pan and set aside.
  • Add parsnip to the used saucepan amd cook, stirring occasionally until browned. (A little more oil may be needed in the pan).
  • Add the onion/garlic mix back to saucepan and add the spices, stir in well and cook for a further minute or until fragrant.
  • Add the wine amd stir until any brown deposits on the side or bottom of the pan are removed and mixed into the wine. (deglaze the pan) then add chicken stock. Simmer for 5 minutes or until parsnip is tender.
  • Add sour cream and using a stick blender or processor ~ process mix until the soup until smooth.
  • Season with salt and pepper (optional).
  • Serve sprinkled with parsley.

Tips:

  • Choose the right parsnips: Look for firm, smooth parsnips with no blemishes or bruises. Avoid any that are soft or shriveled.
  • Peel the parsnips thinly: This will help the soup to cook evenly and prevent the parsnips from becoming stringy.
  • Use a variety of spices: The combination of cumin, coriander, and turmeric gives this soup a warm and flavorful taste. Feel free to experiment with other spices, such as ginger, cinnamon, or nutmeg.
  • Don't overcook the parsnips: They should be tender but still slightly firm. Overcooked parsnips will become mushy and lose their flavor.
  • Garnish the soup with fresh herbs: This will add a pop of color and flavor to the soup. Parsley, cilantro, and chives are all good options.

Conclusion:

This spiced parsnip soup is a delicious and healthy way to warm up on a cold day. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a comforting and flavorful soup, give this recipe a try. You won't be disappointed!
