Kosher salt and freshly ground black pepper
1 pound spaghetti
1 pound ground beef (85 percent lean)
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cups marinara sauce, homemade or store-bought (I like Rao's)
1/2 cup whole-milk ricotta cheese
2 tablespoons minced fresh flat-leaf parsley
3 large eggs
1/2 cup plus 2 tablespoons grated Parmesan
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-3-inch cake pan with cooking spray.
  • Bring a large pot of salted water to a boil. Add the spaghetti and cook for 3 to 4 minutes less than the package recommends, so that it is very al dente. Drain and reserve.
  • In a large skillet over medium-high heat, brown the beef, 5 to 8 minutes; season with salt and pepper. Transfer the beef to a paper towel-lined plate to drain. Wipe the skillet clean with a paper towel. Heat the olive oil in the skillet over medium heat and saute the onions until translucent, 4 to 5 minutes. Set aside.
  • In a large bowl, whisk together the marinara, ricotta, parsley, eggs, 1/2 cup of the Parmesan, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cooked spaghetti, beef and onions and toss to evenly coat. Transfer to the prepared pan, top with the mozzarella and sprinkle with the remaining 2 tablespoons Parmesan.
  • Bake until the cheese is bubbling and golden brown, 25 to 30 minutes. Let rest for 5 minutes, then cut into wedges and serve.

There are other recipes out there like this one, but this is the easiest one I've found, and in my opinion, the best tasting...I always make 2 of these at a time and share the 2nd with friends who in turn share a dish with my family...Or you could make it all in one big 9 x 13" rectangular pan...It's a keeper for sure! 1 lb lean ground beef
1 tablespoon minced garlic
1 (16 ounce) pasta sauce with mushrooms (Prego is the perfect brand for this!)
1 cup parmesan cheese (Kraft grated)
3 eggs
1 tablespoon italian seasoning
1 (16 ounce) carton ricotta cheese
1 (16 ounce) package thin spaghetti, cooked and drained
2 cups mozzarella cheese, shredded

Steps:

  • Brown ground beef and garlic in skillet. Drain well.
  • Mix cooked and drained ground beef/garlic mixture with the Prego spaghetti sauce in a large skillet. Cook on medium/low until heated through.

  • Add cooked and drained pasta (cooled slightly so as not to "scramble" the eggs) and toss well to coat.

  • Bake in a preheated 350 degree oven for 20 minutes, until the cheese melts and is SLIGHTLY crispy on top.

If you use your imagination, you have a pretty good coconut custard pie for dieters, sans the crust. I found this recipe on a WW blog site and bravely tried it. Before you get excited, no, it doesn't taste like Mom's coconut pie, but if you crave dessert (I did) and happen to be following WW Core diet plan (I am), Bob's your uncle! ;-) Prep time does not include cooking the squash - use your favorite method for this, microwave or oven or use up leftovers as I did. The original recipe called 4 eggs, but I used 2 + 1/2 cup Eggbeaters. The fat-free margarine option: this was in the recipe as I copied it but that's not something I ever use. Unable to think of a reasonable substitute, I left it out altogether. My pie turned out just fine but use the margarine if you prefer. Or heck, go all out and sling in some butter. Just don't forget to count the points!

1 lb spaghetti
1 (15 ounce) container ricotta cheese (any kind you like)
2 cups shredded mozzarella cheese
1 (16 ounce) container of shredded romano cheese
1 (16 ounce) container of shredded parmesan cheese
2 large eggs
garlic seasoning
1 lb ground beef
1 (8 ounce) jar marinara sauce

Steps:

  • Heat over to 350 degrees.
  • Boil water and cook spaghetti as specified on package.
  • Cook beef until done. (Season with Garlic Seasoning as preferred.).
  • In a large mixing bowl add 1 cup mozzarella cheese, half of the Romano cheese, 3/4 of the Parmesan cheese, Ricotta cheese, and eggs. Mix together throughly. (Season with Garlic Seasoning as preferred.).
  • Drain spaghetti and add to large mixing bowl.
  • Mix spaghetti and cheese mixture throughly.
  • Grease a large cooking pan and add spaghetti cheese mixture.
  • Spread mixture to coat bottom.
  • Spread ground beef on top of spaghetti mixture.
  • Spread marinara sauce on top of spaghetti/beef mixture.
  • Sprinkle additional mozzarella and Romano cheeses on top of mixture.
  • Bake for 25 minutes.
  • Let sit for 5 minutes to cool.
  • Serve to your family sprinkled with left over Parmesan cheese!

4 oz spaghetti, or angel hair, broken in half 2 times
2 cloves garlic, minched
2 tablespoons butter
1 cup grated parmesan cheese
1 large egg, beaten
2 tablespoons bread crumbs
2 tablespoons oil, vegetable or canola
1 small onion, diced
8 oz ground beef, 90% lean
15 oz tomato sauce, 1 can
3 tablespoons tomato paste
1 teaspoon sugar
1 tablespoon fresh basil, minced
1 cup ricotta cheese
1 large egg
1 teaspoon dried oregano
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Wrap pasta in a clean dish towel and fold twice, breaking pasta into smaller 1-3 inch (2½ - 7½ cm) pieces.
  • Cook until al dente (about 3 minutes) and drain well.
  • In medium-sized bowl, mix warm cooked pasta with garlic, butter, grated parmesan, egg, and bread crumbs. Still until well incorporated and the butter and cheese have completely melted.
  • Press pasta mixture into a deep 10-inch (25-cm) pie plate or casserole dish. Top with bread crumbs.
  • Bake 15-20 minutes, until crust is set and edges have started to brown
  • Heat oil over medium heat in a large skillet. Add onions and cook until softened, about 3 minutes. Add in ground beef and cook until lightly browned. Using a spoon, drain off any excess fat that accumulates in the pan.
  • Stir in tomato sauce, tomato paste, and sugar. Simmer until slightly thickened, about 5 minutes. Remove from heat and mix in basil. Season with salt and pepper.
  • In a small bowl, mix together ricotta, egg, and oregano.
  • Spread ricotta mixture over the cooked pasta crust. Spread the meat sauce over the top of the ricotta mixture then cover with mozzarella. Bake at 350˚F (180˚C) for 25 minutes or until golden brown on top.
  • Let cool for 15-20 minutes before serving.
  • Fancy-Pants Parmesan Crisps (optional for garnish): Pour a tablespoon of parmesan cheese onto a baking sheet lined with parchment paper. Bake at 400˚F (200˚C) until cheese has melted and become golden and crisp, about 5 minutes. Let cool before removing from parchment paper.

3/4 cup frozen corn, thawed

6 oz. (1 1/2 cups) shredded Cheddar cheese

Steps:

  • Cook spaghetti as directed on package. Drain.
  • Meanwhile, heat oven to 350°F. Spray 9 1/2-inch deep-dish glass pie pan with nonstick cooking spray. 8 ounces 90 percent lean ground beef

1 9-inch baked pie crust
1 large spaghetti squash, cooked (about 2 lbs)
3 large slightly beaten eggs
1/4 cup melted butter
1 cup sugar
1 tablespoon fresh lemon juice
1 teaspoon vanilla
ground nutmeg (optional) or cinnamon (optional)
whipped cream, as garnish (optional)

Steps:

  • Set oven 350.
  • With two forks, scoop squash from shell and set aside (you want approximately 3 cups).
  • In large mixing bowl combine eggs, sugar, butter, lemon juice and vanilla.
  • Whisk well.
  • Stir in spaghetti squash.
  • Pour into prebaked pie shell and sprinkle with nutmeg or cinnamon if desired.
  • Bake 40-45 minutes until a knife inserted in the center comes out clean.
  • Cool on rack.
  • Serve with a dollop of whipped cream.
