INDONESIAN GRILLED SWORDFISH

Indonesian Grilled Swordfish image

Provided by Ina Garten Bio & Top Recipes

Categories     main-dish

Yield 6 servings

Number Of Ingredients 9

1/3 cup soy sauce
1/4 cup canola or peanut oil, plus extra for brushing on the grill
2 teaspoons grated lemon zest (2 lemons)
1/4 cup freshly squeezed lemon juice
1/4 cup minced or finely chopped ginger root
2 tablespoons minced garlic (4 cloves)
2 tablespoons Dijon mustard
Six 8-ounce, 1-inch thick swordfish steaks
Kosher salt

Steps:

  • Combine the soy sauce, canola oil, lemon zest, lemon juice, ginger root, garlic, and mustard in a bowl. Pour half the sauce in a low flat dish that's just large enough to hold the swordfish in one layer. Place the swordfish on top of the sauce and spread the remaining sauce on top. Cover with plastic wrap and refrigerate for at least 4 hours or preferably overnight.
  • Thirty minutes before you're ready to serve, build a charcoal fire or preheat a gas grill.
  • When the coals are medium-hot, brush the cooking grate with oil to prevent the fish from sticking. Remove the fish from the marinade, allowing some of the ginger to cling to the fish, and discard the marinade. Sprinkle the fish generously on both sides with salt and place it over the coals. Cook for 5 minutes on each side, just until it's no longer pink in the middle. Place on a platter, cover tightly with aluminum foil, and allow to rest for 10 to 15 minutes. Serve hot or warm.

GRILLED MARINATED SWORDFISH STEAKS

Grilled Marinated Swordfish Steaks image

Swordfish, with its firm, lean flesh, is an ideal candidate for grilling. It's not as forgiving as some fatty fish, like tuna and black sea bass, so proceed with caution. If you remove the fish from the fire when the center is still slightly pink, by the time it gets to the table it should be cooked through. A quick marinade of soy sauce, red wine vinegar, rosemary, garlic, coriander and cumin pairs beautifully with the meatiness of the fish, but do not marinate for more than 10 to 15 minutes, or the acid will break down the flesh and leave it mushy (or the flavor will overpower the fish). If you don't have a grill, this works equally well in a broiler. Serve this alongside a colorful pile of Pierre Franey's green bean and tomato salad. It's a summer meal you'll never forget. (Swordfish is on the Monterey Bay Aquarium's seafood watch list, but you can find sustainable options here.)

Time 30m

Yield 4 servings

Number Of Ingredients 11

4 center-cut swordfish steaks, about 6 ounces each, one-inch thick
Salt and freshly ground pepper to taste
3 tablespoons olive oil
2 teaspoons soy sauce
1 tablespoon red-wine vinegar
4 sprigs rosemary or 1 teaspoon dried
1 tablespoon finely chopped garlic
2 teaspoons ground coriander
1 teaspoon ground cumin
2 teaspoons grated lemon rind
1/4 teaspoon red pepper flakes

Steps:

  • Preheat a charcoal grill or broiler, or heat a grill pan.

Place fish steaks in marinade, coat well on both sides, cover with plastic wrap and let stand for 10 to 15 minutes.
  • If the swordfish is to be cooked on a grill (or grill pan), place fish on grill and cook for 3 to 4 minutes. Turn and cook for 3 minutes more. Cook longer if desired. If it is to be cooked under a broiler, place fish on a rack and cook for 3 to 4 minutes on each side. Serve with a string bean salad.

Categories     < 60 Mins

Time 46m

Yield 4 serving(s)

Number Of Ingredients 6

1/3 cup honey
1/4 cup reduced sodium soy sauce
2 cm gingerroot, peeled, grated
1 teaspoon sesame oil
8 small white fish fillets (such as snapper)
salad greens, to serve (baby asian)

Steps:

  • Combine honey, soy, ginger and oil in a saucepan over medium heat.
  • Cook, stirring, until marinade comes to the boil.
  • Set aside to cool. Pour marinade into a ceramic dish.
  • Add fish to cooled marinade. Turn to coat.
  • Cover. Refrigerate for 30 minutes.
  • Preheat a chargrill or barbecue on medium heat.
  • Remove fish from marinade, reserving marinade.
  • Cook fish, brushing with marinade, for 3 minutes each side or until cooked to your liking.
  • Place onto plates.
  • Serve with Asian salad greens.

Tips:

  • Choose the right swordfish. Look for swordfish that is firm and has a mild, sweet flavor. Avoid fish that is mushy or has a strong fishy smell.
  • Marinate the swordfish. Marinating the swordfish in a flavorful mixture of soy sauce, ginger, garlic, and sesame oil will help to add flavor and moisture to the fish.
  • Grill the swordfish over medium heat. This will help to prevent the fish from overcooking and becoming dry.
  • Cook the swordfish until it is just cooked through. Swordfish is a delicate fish, so it is important to avoid overcooking it. The fish is done when it flakes easily with a fork.
  • Serve the swordfish immediately. Swordfish is best served immediately after it is cooked. You can garnish the fish with fresh herbs, such as cilantro or scallions.

Conclusion:

Soy-ginger grilled swordfish is a delicious and healthy dish that is perfect for a summer meal. The fish is marinated in a flavorful mixture of soy sauce, ginger, garlic, and sesame oil, then grilled to perfection. The result is a moist, flavorful fish that is sure to please everyone at the table.
