Provided by Martha Stewart

Categories     Food & Cooking     Main Dish Recipes     Casserole Recipes

Number Of Ingredients 12

Unsalted butter, for baking dish
4 large sweet potatoes (about 4 pounds), peeled and thinly sliced into rounds
Coarse salt and freshly ground pepper
1 1/2 cups grated Chihuahua or Monterey Jack cheese (6 ounces)
1 1/2 cups Cotija or French feta cheese, crumbled (6 ounces)
1 small onion, thinly sliced
1 teaspoon finely chopped canned chipotle chile in adobo (optional)
1/4 cup plus 2 tablespoons homemade or low-sodium store-bought chicken stock, or water
1/4 cup finely chopped fresh cilantro leaves
1 cup crushed tortilla chips
Lime wedges, for garnish
Mexican crema or sour cream, for garnish (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-13- inch baking dish; set aside. Toss potatoes with 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Arrange half of potatoes in buttered dish, overlapping slices. Sprinkle with half of each cheese. Top with onion.
  • Stir chipotle (if desired) into stock; drizzle over onion. Sprinkle with half the cilantro. Top with remaining potatoes; sprinkle with remaining cheeses and cilantro. Scatter chips on top.
  • Cover with foil; bake 30 minutes. Remove foil; bake until very tender and top is well browned, about 30 minutes more. Let cool slightly before serving. Serve with limes, and with crema, if desired.

Tips:

  • Choose the right sweet potatoes: For this recipe, it's best to use firm and medium-sized sweet potatoes. Avoid using sweet potatoes that are too large or too soft, as they may not hold their shape well during cooking.
  • Cut the sweet potatoes evenly: Cutting the sweet potatoes into uniform cubes or wedges will help them cook evenly. If the pieces are too small, they may overcook and become mushy.
  • Don't overcrowd the pan: When cooking the sweet potatoes, make sure not to overcrowd the pan. This will prevent them from cooking evenly and will result in steamed sweet potatoes instead of roasted ones.
  • Roast the sweet potatoes at high heat: Roasting the sweet potatoes at a high temperature will help them caramelize and develop a crispy exterior.
  • Season the sweet potatoes well: Before roasting, season the sweet potatoes with a mixture of salt, pepper, and other desired spices. This will enhance their flavor.
  • Add a touch of sweetness: To balance the savory flavors of the dish, consider adding a touch of sweetness to the sweet potatoes. This can be done by drizzling them with honey or maple syrup, or by adding a pinch of brown sugar.

Conclusion:

This Southwestern Sweet Potato Sauté is a simple and flavorful dish that can be enjoyed as a side dish or as a main course. The sweet potatoes are roasted until tender and slightly caramelized, and then tossed with a flavorful mixture of spices, beans, and corn. This dish is a great way to enjoy the natural sweetness of sweet potatoes, and it's also a healthy and satisfying meal.
