1 cup chopped country ham
1 small red bell pepper, chopped
6 eggs
1/3 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
4 ounces shredded cheddar cheese

Steps:

  • Heat butter in a large skillet over medium-high heat.
  • Add ham and red pepper.
  • Saute until ham is browned and pepper is slightly soft.
  • Meanwhile, mix eggs, cream, salt, pepper, chili powder, and garlic in a medium bowl.
  • Whisk vigorously until the eggs are a uniform color with no streaks.

1 teaspoon vegetable oil
1 large potato, peeled and cubed
1 medium onion, chopped
1 garlic clove, minced
1/2 cup chopped green pepper
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 beef bouillon cube
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
4 eggs
3/4 cup shredded cheddar cheese
4 corn tortillas (6 inches), warmed

Steps:

  • In a 10-in. ovenproof skillet, cook pork in oil until browned, about 4 minutes. Add potato, onion, garlic and green pepper; cook and stir for 4 minutes. Stir in tomatoes, bouillon, cumin, salt, pepper and cayenne. Cover and cook over low heat for 30 minutes or until potatoes are tender, stirring occasionally. 1 pound bulk pork sausage
1 medium onion, chopped
1/2 pound sliced fresh mushrooms
1/4 teaspoon salt
1/4 teaspoon pepper
6 large eggs
3 tablespoons milk or heavy whipping cream
1 can (10 ounces) diced tomatoes with green chilies, drained
1/2 cup each shredded cheddar, part-skim mozzarella and Monterey Jack cheeses

Steps:

  • In a large skillet, cook the sausage, onion, mushrooms, salt and pepper over medium heat until meat is no longer pink; drain and set aside., In a blender, process eggs and milk for 1 minute or until smooth.
